Vegan Cookies

Vegan, Dairy-free,Wheat-free, Egg-free, Gluten-free, Yeast-free
I'm definitely a Cookie Monster! I love them, especially those fresh from Bakery's! I remember when i was young, my parents used to get me and my sister a starfish shape white chocolate cookie with sprinkles from Greg's  (a bakery shop) occasionally! 
Now whenever i have cookies it takes me back. I haven't made cookies in so long, and with this dreary british weather we are having atm, made me want to bake. They taste sooo good!
I think if you make these, you will be pleasantly surprised, i was attempting to make them for the first time using a Vegan, Dairy-free,Wheat-free,Egg-free, Gluten-free & Yeast-free recipe, but they turned out perfectly...like they have come from a bakery! i promise :) 


Preparation time- 5-10 mins
Cooking Time- 6-10 mins( keep checking so they don't burn)
Cooling time- Just get stuck in while there warm :)


Ingredients- 
-128grams of Almond Flour
-197grams of Plain flour
( Or you could just use 325grams of plain flour)
-1/2 Teaspoon of Bicarbonate of Soda
-1/2 Teaspoon of Salt
-100grams of Honey ( or Agave Syrup) 
-1 Teaspoon of Vanilla Extract
-125grams of Grapeseed Oil
-Orange ( Grated and Squeezed)
-Dairy-free Chocolate ( I used Moo Free Mint and Bunny Comb, and Free from Choco-Orange Bar, you could always use Honeycomb Pieces which can be found in the Baking Section of a large Supermarket, Real mint leaves chopped Finely)
You also could use any diary free chocolate you like and add in flavours like Squeezed Lemon, Grated Ginger or Coconut)


Lets get Baking....

Step 1- Get all of your ingredients out, and measure.

Step 2- In a Large mixing bowl, combine the Flour, Bicarbonate of soda and Salt until mixed.

Step 3- Next, in a separate mixing bowl, combine the wet ingredients, the Oil, Vanilla extract honey or Agave syrup whichever you have.

Step 4- Pour the wet mixture into the dry and mix up until light and crumbly.


Step 5- Now, as i wanted different flavours in my cookies, i next Split the mixture into 3 equal sizes and in different bowls


Step 6-  In the first bowl, add in the Grated or broken up dairy-free chocolate ( i used Moo free Mint ) Mix until the Chocolate is equally distributed within the mix.


Step 7-  With your clean hands, scoop up some of the mixture and form into small balls and firmly press on to your baking paper ( making sure that you leave a small gap in between the cookies, because they do puff up.


I repeated Step 7 for the honey comb and Chocolate Orange( adding in a Tablespoon of Squeezed Orange juice and a pinch of Orange peel)

Step 8- Put the Tray full of delightful Cookies in the Oven at 180 Degrees, Gas Mark 4 and bake for 6 minutes.

Step 9- After 6 minutes, check the Cookies, and bake for an extra 4 minutes, until your Kitchen smells like a Bakery & cookies are a light, golden brown.

 Step 10- With an Oven Mitt, take the tray out of the oven and place on a Worktop.
Immediately scoop up the Cookies and place on a Cooking rack to cool.


Serve them warm with the gooey melted chocolate, or be patient( un-like me) and wait until they have crisped and are cool :)

This recipe is quick, easy and extremely delicious! These will go down a TREAT at birthdays, easter or any other reason to eat some sweet treats!!
