Coconut, Spinach and Red Lentil Dahl

Vegan, Dairy-free, Wheat-free, Gluten-free, Egg-free, Yeast-free
A Healthy, Protein Packed Creamy Coconut, Spinach and Red Lentil Dahl Served Boiled Rice & Freshly Picked Coriander Leaves!

Recently i have been craving hearty, warming food and what came to mind....COCONUT! 
I have never made a Dahl until my Mum said 'why not make a Dahl' i did *thanks Mum* haha
I combined all of my favourites, Coconut with Red Lentil and Spinach! Its a real Protein Kick! Just what I've been needing. This is such a quick recipe and i would highly recommend it for anyone who loves a bit of Creamy Coconut, Soft Lentils with Indian spices! Its super yummy! 

-1 Tablespoon of Coconut Oil
-1 Medium sized White Onion (Chopped)
-2 Garlic Cloves or 1 Large Garlic Clove (Minced)
-1/2 a Tablespoon of Fresh Ginger (Minced)
-2 Teaspoons of Curry Powder (I used Mild)
-1 Teaspoon of Turmeric
-1/2 a Teaspoon of Mild Chilli Powder
-1/2 a Teaspoon of Black Pepper
-1/2 a Teaspoon of Chilli Flakes
-280grams of Red Lentil (Dried)
-300ml of Coconut Milk from a Can
-600ml of Filtered Water
-A good Handful of Roughly Chopped Spinach
-Pinch of Rock Salt
-Fresh Coriander leaves for Dressing
-Golden Linseed or Chia Seeds for Dressing (and to add extra Protein & Crunch) 

Lets get cooking....

Step 1- In a Large Wok, Put the Coconut oil on the Heat.

Step 2- When the Oil has turned to Liquid and is Hot, add the Chopped Onions, Minced Garlic and Ginger. Leave on the heat, stirring Occasionally for 3-5 minutes.

Step 3- Sprinkle in all of the Spices and mix in. Then add the Lentils, Water and Coconut Milk. Stir then Cover with a Lid, turn up the Heat and bring to the Boil. Let it Boil for 10 minutes. 
After 10 minutes, turn the Heat down and simmer for about 20-25 minutes until the Lentils are nice & Soft. Keep Stirring the Mix to stop it sticking. Add extra Water if needed.

Step 4- Scatter the Spinach all over the Mixture and mix in until equally distributed. Cook for a further few minutes.

Pour into your Favourite Bowl or Serving Dish for Sharing or Spoon onto your Plate for a lovely wholesome meal!
This meal is very filling, but i did have seconds ( thats how good it is) :P

If your wanting a whole meal, i would suggest serving up with some Wholegrain or White Boiled Rice! Goes down a treat with the Family. Even throw in a Vegan Naan bread or Pitta. yum yum

I would have sprinkled Chia seeds all over the top, but i unfortunately have ran out and need to purchase some more! But i did have some Golden Linseed sitting on my Shelf so i substituted! It was very tasty! Very good cooking *Pats self on the Back* :P

Spicy Mexican Cups and Tangy Guacamole

Vegan, Dairy-free, Wheat-free, Gluten-free, Egg-free, Yeast-free
A Healthy Light & Spicy Mexican Beanie Mix in a Tortilla Cup with my Homemade Tangy Guacamole & Fresh Greens! 
Topped off with Chia and Dairy-free Cheese!
How amazing does this sound! Tastes Even better!

Preparation time- 15 minutes
Cooking time- 30 minutes
Serves- 7-10 hungry tummies

As we've been having some lovely sunny Days here in England recently, i wanted to make a meal that replicates the weather....Light with a Kick(you know me..its just another excuse to make a yummy Mexican Meal) haha :P 
 With it's light and soft texture, close your eyes and you really feel like your in Mexico with this delightful dish :)
Make the experience even better with some Homemade Tangy Lime Guacamole! yummy
This is a great & fun recipe for all the family to enjoy making :)



-2 courgettes (Chopped)
- 1 Lime (Juice)
-1 Tablespoon of Olive Oil
-1/2 a Red Onion (or 1 small Onion) Chopped
-Can of Sweetcorn (I used Fresh or you can use Frozen)
-Cooked Mixed Beans (I used a mix of Black Turtle Beans, Red Kidney Beans, Pinto & Haricot)
You can add whatever beans you like
-A Handful of Corriander (Chopped)
-Pinch of Chilli Flakes (or you could use a pinch of Smoked Paprika)
- 1/2 a Red & Green Pepper (Roughly Chopped)
-3 Green Jalapeños (you can add more if you would like a real Fiery Kick)
-Salt & Pepper to Season
-Tortilla Wraps (I used BFree Gluten, Wheat, Egg, Dairy Free which you can find in Supermarkets under the Free From Section, i get mine at Asda)

-1 Avocado
- 1/2 Large Tomato (Roughly Chopped)
-1 Tablespoon of Lime Juice
-1 Small Garlic Clove (Crushed)
-1/2 a Red onion (Finely Chopped)
-Seasoning ( Salt & Pepper)

Lets get our Mexican Hat on...haha

Before we get started on the Mexican Filling, Prepare your Tortilla Cups.
Grab a Tortilla, and cut it into Quarters.

With 2 Triangles,put them together and press into a Muffin Tin ( If you don't have a Muffin tin, thats fine you can use a Ramekin...

Pop them in the oven until Crispy and Golden Brown ( about 5-8 Minutes)
When the Tortillas cups are cooked, remove them from the Oven and place to one side.

Step 1- Prepare you Worktop, and Vegetables.

Step 2- In a Large Wok, add in your Tablespoon of Oil on a low heat.

Step 3- Add in your Chopped Onion and Crushed Garlic, and Sauté for 2-3 Minutes.

Step 4- Once the Onion and Garlic are soft and just turning a nice Golden colour, add in your Chopped Peppers for 2-3 Minutes ( Keep stirring the Mix with a wooden spoon to prevent sticking)
Add a little more Oil if needed.

Step 5- Add in your Roughly Chopped Courgette, Mixed beans, Lime Juice, Jalapenos, Sweetcorn, Coriander and a little Seasoning ( Chilli Flakes, Oregano, Salt & Pepper)

Step 6- Cook on a Low Heat with a Lid on ( This helps the Mix to cook in its own Juices and prevents Sticking and drying out)
Cook for about 10 Minutes, Stirring Occasionally. 

Step 7- When the Mix has fully cooked and the Courgette is Soft, take the Lid off and cook for a further 2-3 Minutes.

Step 8- After 3 Minutes, take the Wok of the Heat and Spoon the mix into the Warm, Crispy Tortilla Cups.

This is when you can add Vegan Dairy-free Cheese, a sprinkling of Chia Seeds, extra Coriander  dusting of Smoked Paprika or anything you like. 

How to make a Juicy, Limy Creamy Guacamole-

Step 1- Cut an Avocado in half and De-stone. Scoop out the inside of the Avocado and Dollop into a Mixing Bowl.

Step 2- With a Fork, mash the avocado till its light and Creamy. it doesn't matter if there are lumps, this gives it more texture.

Step 3- Add in the Chopped Tomato, Lime Juice, crushed Garlic, Onion and Seasoning. Mix together.

I served mine with some Green Salad leaves ( Rocket, Watercress & Spinach)
this meal is lovely for coming up to Summer.

 You could also add some Rustic Homemade Potato Wedges.

Hidden Sugars on a Vegan Diet

There has been a lot of hype recently about hidden Sugars in Food. I have written several posts recently on different Confectionary and Drinks.
As much as we all love Treating ourselves to something Sweet and yummy, there are a few things to be aware of!
One of these in Particular is Sugar!!!
Sugar can come in all for in all sorts of Food.
Most People in the UK and Elsewhere in the World, eat too much Sugar. The Sugars that naturally occur in Food, for example Fruit and Milk, are Okay to consume and we don't need to Cut down on these, but its the Sugars that are in things like Sweets, Chocolate, Cakes, biscuits, Fizzy Drinks and Juice Drinks. Having too much Sugar in your Diet can make you unhealthy, it can cause to you put weight on and in extremes can become obese, increases the Risk of Heart Disease & Diabetes. 
It can also cause Tooth decay and Tooth Discolouration. I have written a post on Keeping Teeth White and Healthy if you would like to Check that out, here is the Link-

You can get an Idea of how much added Sugar is in a food by where the Sugar comes in the Ingredients list ( this is something i try to look out for now, when buying Sweet Treats occasionally). Also the Nutritional Information located on the Packaging will give you an indication of how much Sugar in Grams is in the Food. For example, 4 grams of Sugar is about 1 Teaspoon of Sugar. Also, its a great idea to look out for the Words used to indicate the added Sugars e.g.- Sucrose, Glucose, Fructose, Maltose, Corn syrup, Honey, Cane Sugar, Agave Nectar/Syrup , Invert Sugar and Hydrolysed Starch.

The higher it comes in the Ingredients list, the more Sugar will be in the Food/Drink.

I have also noticed, the often Vegan Confectionary and Foods may have more added Sugar. But often Companys that make Vegan Food, try to address this problem, by reducing the Sugar and adding in Healthier Alternatives e.g.- Natural Fruit Sugars.

I noticed in doing these Blog Posts and Reviews, how much Sugar is actually used in Foods. Some of the Products contain more Sugar than others.
In doing these Blog Posts and Reviews, i am in No way promoting eating High Sugar Foods, it is okay to enjoy Sweet Treats in moderation, with keeping to a Healthy, Balanced Diet. 

I wanted to write this post, as i don't think its talked about enough! :)

I hope this post is informative. I have learned all of this, be researching what i Eat and others. Being Healthy is of great importance to me. I have struggled with Sugar in the Past, but now i don't need Sugar (or use) Sugar as much as i used to. i can now Enjoy it as a Treat and not feel Guilty and not over Indulge.

Vegan at Pizza Express

What is Pizza Express?
Pizza Express is a Delicious Pizzeria, with over 400 Restaurants scattered around the UK and 40 overseas countries.
Pizza Express specialises in Handmade Pizzas ( They also have different Pasta and Salad dishes)
The Resturants (i have been in) all feel the same, with a relaxed, Italian feel and at Reasonable Prices. 

Pizza Express carter for Vegans and Vegetarians. 
Last year, Pizza Express added a Vegan Pizza to their Menu! Pianta Pizza topped with  chestnut mushrooms, Spinach, Pine kernels and Artichokes on a Spicy Arrabbiata base, which is all made in House. Doesn't this sound gorgeous!!
When i was last in Pizza express, i asked one of the kind staff about what Vegan Meals they have.
Any of the Pizzas can be made completely Free of Animal & Dairy-free Products, and i was told, next time i visit i could take in my own Vegan Cheese to top my Dairy-free Pizza...this is an excellent idea! 

Their Website also States-
''Unfortunately we don’t have a vegan cheese but you can ask for any of our other pizzas to be made without cheese.
You are also welcome to bring in your own vegan cheese to top your pizza, provided that it is in a sealed pack, in date and the date is clearly visible on the pack. Our pizzaiolos can either return to you the rest of the pack or dispose of it. It cannot be brought in/kept at the restaurant for repeat use.''
Pizza Express's famous Passata sauce is made from Tomatoes, Salt, Pepper, Fresh Basil and Oregano, sounds so tasty & delicious!  This is making me Hungry haha! 

More Vegan options on the Menu include a Healthy, Fresh Superfood Salad (just ask for it without mozzarella) as that obviously contains Dairy.
They also sell a mouth watering Refreshing Raspberry Sorbet for Dessert. yummy!

Gluten Free Choices-
Pizza Express have Introduced a Gluten-free Range of yummy Pizzas and a range of Risottos, Sorbets and a Pilsner. 
This is great for Customers ( like myself) who need to Avoid Gluten.
Even Salads can be Made Gluten-free, by making sure the Chef removes the Croutons and Dough Sticks from your Meal. 

As you can see, Pizza Express have made it easy to find a meal to Suit you and your Diet. I am more than happy to sit and enjoy a tasty, moorish meal at Pizza Express. The Staff are always very kind and helpful. Just the customer service you want at a Restaurant.

Vegan at Prêt A Manger

What is Prêt A Manger?
Prêt A Manger is a Fast Food Restaurant based in the UK.
Prêt is great for on the go, as well as sitting in and enjoying its friendly atmosphere and Environment.
Prêt make it very easy to find Vegan and Vegetarian food ( as in the Restaurant all of the Vegan food is Labeled with a vegan logo, so this is super easy to find the snacks to suit you!)

My favourite Snacks to pick up in Prêt are the Crisped Kale Crisps and Super Smoothie. The kale Crisps are what first got me into Prêt. They are slow dried Kale, seasoned with Olive Oil, Fresh Rosemary, Lime juice, Sea Salt, Garlic Powder, Black Pepper and Coconut palm Sugar. Simply Yummy!

They are the perfect healthy snack, as well as being crunchy and packed full of lovely flavours, Spice, Vitamins & nutrients.
