Lemon, Cherry and Chia Cookies

Vegan, Dairy-free, Wheat/Gluten-free, Low Sugar
Very quick & easy low Sugar Lemon & Cherry Soft Cookies with moist fillings & edible gold leaf!




I have been using Lemon a lot recently in my Baking, and so i decided to make some Soft, Lemon & Cherry Cookies. Lemon and Cherry go really well together as you get a zesty kick from the Lemon with the sweetness of the Cherry. I also decided to add in some Chia seeds, to add extra goodness! These Cookies are Low in Sugar and only use Natural Sugars.I used Almond Flour as opposed to White/Wheat, as this way everyone can enjoy them, they are higher protein and it gives these tasty Cookies extra flavour!  These are great fun to make and nibble on and they also remind me of Jammy Dodgers i used to eat when i was younger, so its yet another trip down memory lane....or shall i say yummy lane :P 

Ingredients-
-130grams of Almond Flour
-1/4 Cup of Coconut Oil
-2 Tablespoons of Maple syrup
-1/2 a Teaspoon of Bicarbonate of Soda
-Pinch of Salt
-1/2 a Lemon (Juice)
-1/2 a Teaspoon of Chia Seeds (Optional)
-10 Glacé Cherries

Lets get Baking........

Step 1- Pre-heat your Oven to 180degrees, and line a baking tray with Grease proof Paper.

Step 2- Add the Almond Flour, Salt and Bicarbonate of Soda into your Food Processor and whizz up until fine/smooth.

Step 3- Then add in the Maple Syrup, Coconut Oil, Lemon Juice, Cherries and Chia Seeds and leave to mix until a Dough begins to form.

Step 4- With clean hands, scoop a small amount of the Dough and form into circular cookies. Make them around 1/2 an inch thick.After forming into small Cookies, i used my Cake Boss Cookie Cutter Kit to cut out small shapes in the centre of the Cookies. Only cut out half of the Cookies, and leave the other Cookies whole, which you will use for the bottom layer.

Step 5- Once you have your Cookies prepared, place them onto your prepared tray and pop them into the Oven for 5 minutes or until turning a light and golden Brown. These will burn easily so keep checking on them

Step 6-  When your kitchen smells Devine, carefully remove the tray from the Oven and leave aside for a few minutes. 


As these Cookies cool, they will turn a little darker in colour, which is perfectly fine and will not change the delicious taste in any way!

Step 7- Once the cookies have cooled, its time to get creative! You can stop here and nibble on them as they are, but i decided to fill my Cookies with some tasty Cherry Jam & Lemon Marmalade.

Step 8- Now it time to put them together!!!First, get 1 whole cookie and another with the centre out.
Turn the Full Cookies upside down and spread on some Cherry Jam.
Place the Half Cookie ontop of the Jam and fill the Hole with more Cherry Jam or preserve. Leave like this, or add some dazzling Edible gold for a festive touch!!!Repeat for the Lemon Flavour.
And were done!!!!!!
