Christmas with Choices

As a Child, i would alway get excited for the beginning of December, as this is the time to deck the house up, get festive and open Advent calendars!!! 
Im so excited for Christmas, i picked myself up a few little Christmas treats to get festive. 

Choices is a Chocolate Company based in Ireland, who make delicious Dairy-free Chocolate Alternatives. They have products all year round in Supermarkets & health food stores and make special Easter & Festive treats.

Autumn Favourites

Hello Autumn!
As Summer has officially left us for this year....we are now in AutumnI wanted to write my first seasonal post. In this post, i will talk you through some of my favorite Vegan Beauty products which will help you feel like its still Summer :)

The first product is a Perfume! I am a sucker for anything Citrus or Sweet scented. I picked up this Perfume whilst on holiday in France over the Summer.

TeaTree-The Wonder Product!

First of all, let me tell you what TeaTree is!

What is TeaTree?
TeaTree is an essential oil, which comes from leaves on the Melaleuca alternifolia plant (wow, thats a mouth full to say) 
Colour of TeaTree Oil differs from every bottle, some can be a light yellow and others can be clear. 

TeaTree Oil has many benefits and uses. It is widely used in Hair products and Cosmetics (in low concentrations of course, as it is extremely strong)

TeaTree Oil has been said to help many Conditions such as Acne,Insect bites, Lice,Thrush, Eczema  Ear infections, Ringworm, Dandruff, Athletes foot and many other conditions as it is a natural Antiseptic, anti fungal and has healing properties.

Not too long ago, i was suffering from a Scalp irritation. I went to the Doctors, and they prescribed me some Steroid cream which i was extremely worried about... especially as its going on my scalp! I try to use natural products and after googling my symptoms online (which girls, i know we all do and need to stop :P ), it recommended that i apply a tiny amount of TeaTree Oil onto my scalp. After 4 days, my irritation was less angry and sore, it felt somewhat back to normal. I really do put this down to TeaTree Oil, as it contains Anti-Fungal and Anti-Bacterial properties. 

Make sure you only apply a small amount at a time, as too much pure TeaTree Oil on your skin can cause an adverse reaction, such as Skin Irritations/Itching....so do be careful especially if you have sensitive skin.It is a good idea to dilute the pure oil in another oil like olive oil.

I myself have been using Tea tree Oil for a good 3 years now. I first started using it when i had mild break outs on my face and when the winters cold weather would arrive to challenge my system. 

At night, i would lightly dab a tiny amount on my skin, and by the morning, redness was less visible. Once i dap the Oil onto my broken out skin, i instantly feel it working. My Skin tingles and feels nice and cool.
Even now and again, i will have a mild break out and i will always go back to my Oil. The reason this Oil helps breakouts and acne as it penetrates your Pores, loosening up blocked Oils and bacteria that can worsen into "Bad Skin"

Sometimes i am clumsy and have end up falling over something, causing minor cuts/abbrasions, mainly on my poor old Knees. Just dabbing a little TeaTree Oil on your Cuts can prevent you from getting an infection.

My Mum also believes in using natural products, and when i was young (even now when i have a cold) she puts approximately 4-5 drops of the TeaTree Oil on a piece of Tissue and place it somewhere in my room, so while i  sleep, it helps to clear my Sinuses (as we all know how miserable having a blocked nose is!!! ahh) You can also add a few drops into some boiling water and inhale the steam. This will also help clear your Sinuses.

The TeaTree Oil i highly recommended is the Dr Organics Pure TeaTree Oil. It is Bio-active (meaning it has a biological effect) and is Organicaly Certified. 
It is a 10ml bottle, which is enough considering how powerful this stuff is! A little goes a long way!!!

I absolutely LOVE the smell of this Oil. It is fresh with a very pleasant aroma, which lasts! `Its very pungent which isn't everybody's cup of tea, but personally i could sniff it all day (but that would be a little odd) :P

Teatree oil is safe...but Toxic if Swallowed, so do be careful and DO NOT SWALLOW! :)

Avacado, Mint and Raspberry Cacao Mousse

Vegan, Vegetarian, Dairy-free, Gluten-free, Wheat-free, Yeast-free, Guilt-free
Very quick & easy Raw Avacado, fresh Mint, Raspberry, Cacao Mousse with homemade Dairy-free Chocolate Decorations!
(Holly berries are only for decoration only, must NOT be eaten)

As its coming up to the festive season, i decided to create a healthy dessert using only natural Sugars.
The Mint leaves and raspberry remind me of the Holly leaves and berries, i really enjoyed making these little Desserts. I wanted to make some decorations which are edible (so of course i opted for Chocolate) 

This Mousse contains Avocado, which is one of my favourite foods at the moment and has great health benefits. You can read all about Avocado and its wonderful benefits on my blog post linked below-

The Cacao adds a lovely dark Chocolaty flavour, whilst being packed with Nutrients and goodness!

Why not indulge in a healthy treat, which tastes too good to be true<3

Ingredients-
-4 Ripe Bananas
-2 Ripe Avocados
-4 Tablespoons of Almond Butter
-5 Teaspoons of Raw Cacao Powder
-15 Dates
-Handful of fresh Mint Leaves
-Handful of fresh Raspberries
-1 Dairy-free Chocolate Bar
-1 Tablespoon of Water
-Drizzle of Maple Syrup/Agave Nectar
-Sprinkle of Sesame Seeds (optional)

Make sure you fully wash and prepare all your ingredients! 

Step 1- Slice your Avocados in half and remove the stone. Scoop out the creamy Avocado flesh and pop it into your Food Processor. Whizz up until creamy and smooth.

Step 2- Add the Banana, Dates, Cacao Powder, Almond butter, Mint leaves,Water and Maple Syrup into the Food Processor.
Blend until smooth and creamy.......until it looks irresistible! *drools*

Step 3- Spoon out some of the mousse and serve in cute little bowls or glasses.

Make this dessert extra special with some edible Dairy-free Chocolate decorations.

How to make the Chocolate Decorations!
This is the exact way i made my chocolate waffle on my Lemon Cheesecake recipe.

All i did for these, was drizzle some melted dairy-free Chocolate onto Grease proof paper in different shapes and whilst the Chocolate was still liquidly,  place on some Mint leaves to look like a Tree and some Raspberry bits to give a really effective...effect :P
I think they really add to the dessert and make it look special and eye catching!


Decorate your Mousse with your Chocolate Decorations and some mashed Rasberry and a mint leaf. Mashed Raspberry tastes delightful mixed into this Mousse! 
I also sprinkled some Sesame seeds ontop for added texture, and Protein :)
It could even be serve up with some cheeky Soya/Coconut Cream.

Keep the Mousse chilled in the Fridge until ready to indulge :)

Its almost Christmas.....

HO HO HO, Have a Moo Free Christmas!

As you may know, i love my Chocolate and especially Moo Free. I have written posts about Moo Free and their Chocolate Range before, but as its almost Christmas, Moo Free have a few products out that will sure to make Christmas Extra Special and Fun for any ages!

All these Bars are quality Milk Chocolate, with different flavours. Im not a huge fan of mint, but i really like the flavour in Moo Frees Chocolate. It is Mild and creamy. 

The Bunnycomb is my go to Chocolate bar, as i really like the chewy and sweet Honeybomb pierces sprinkled all over the Bar. It adds texture and extra flavour.

Simply Grains (Artisan Salads)

Simply Grains is a Artisan Salad company which are made with Nutritious whole grains and the freshest ingredients sourced within the UK, and are suitable for Vegans and Vegetarians. 

The Salads are handmade using various types of Grains e.g.- Quinoa, Spelt, Barley, with fresh, local produce. 

These Grains have a variety of benefits...
These are just a few health benefits about the wonderful Grains....

Spelt- Spelt is high in Protein which is vital on a Vegan diet. It is a good source of B complex Vitamins and is a good Carbohydrate.

Quinoa- Quinoa should be a main Food in all Vegan diets, as it contains Iron, Protein, Vitamin E, Fibre, Potassium, Calcium, Magnesium and MORE!! I also really love the taste of Quinoa. It has a sort of Nutty flavour and soft texture which is lovely added into Salads...

Barley- Barley is a really good versatile Grain, and it is a good source of Molybdenum, Manganese, Dietary Fiber, Selenium,copper, Chromium, Phosphorus,Niacin, Magnesium and Vitamin B1.

Simply Grains has just been started up by a Woman named Tri Bannister in London. She started up Simply grains as she wanted to introduce healthy foods that can be enjoyed & taste delicious too!!! 

Simply Grains has been to quite a few Food Festivals including the BBC Good Food show,  Duck pond Market and State of Independence market.

Tri was ever so lovely and kindly sent over 2 of their Salads for me to try.

I got my hands on the Seasonal Barley Salad and the Tabbouleh Salad and i was so excited to taste them, as i love my Salads and Grains! 
I really enjoyed the Seasonal Barley Salad. It contains Black Eye beans, juicy Cherry Tomatoes, Fresh Basil, Onions and a freshly made Pomegranate Vinaigrette. As this is a Barley Salad, this will not be suitable for people who suffer with a Barley allergy. 
All of the flavours go really nicely with each other, and i like how the Tomatoes and Onion chunks soak up the Vinaigrette.

The Tabbouleh Salad is made with Quinoa, fresh Mint, Onion, Tomato, Parsley, with a zesty freshly squeezed Lemon Juice Vinaigrette. 
The cool Quinoa really sets off the Mint flavour, as it soaks up juices. The Cucumber chunks add texture. As Quinoa isn't a grain, its a Pseudocereal seed , many use it as a Gluten Substitute  Making this Salad GLUTEN-FREE!


These Salads require no warming up, just pop them in the fridge and tuck in whenever your peckish or eat on the go! 

I also really like the classy, minimalist packaging, i find it really appealing!

Rich Chocolate Bourbon Cupcakes

Vegan, Vegetarian, Dairy-free! 
BOURBONS ARE VEGAN! :D
Bourbons are 2 moorish Chocolate Biscuits sandwiched together with a Chocolate cream filling centre....They are simply Delicious!
These Cupcakes are extra Special as they have a hidden Biscuit in the Cake!
I made these yummy Cupcakes for my Sisters birthday, they went down a real treat. Really nice for any Choco-O-Holic :)

Ingredients-
-1 family pack of Bourbon Buiscuits
-200grams of Plain Flour ( i used Gluten-free)
-200grams of Caster Sugar
-3 1/2 Tablespoons of Cocoa Powder
-A pinch of Salt
-1 Teaspoon of Bicarbonate of Soda
-4 Tablespoons of Vegetable Oil
-1 1/2 Teaspoons of Vanilla Extract
-250ml of Filtered Water

Frosting-
-1 1/2 cup of Icing Sugar
-1/4 Cup of Vegan Butter (Earth Balance or Vitalite)
-1 Teaspoon of Vanilla Extract
-2 Tablespoons of Soya Milk (you can use Vanilla Flavoured)

Lets get Baking.....

Step 1- Get out your Utensils and Ingredients and Pre-heat your Oven to 180 Degrees. 

Step 2- Weigh out your Ingredients and in a Large mixing bowl, Sieve in the Flour, Caster Sugar, Cocoa Powder, Salt and Bicarbonate of Soda. Mix up until smooth.

Step 3- Pour in the the Oil, Vanilla Extract and Water, mix until a dark brown Liquidy Texture. 

Step 4- Line a Cupcake tin with Cases ( i used Muffin cases) and in each Cupcake Case, drop in 1half a Bourbon Biscuit for a little surprise.

Step 5- Start to cover the Bourbon's with the gooey Chocolaty Mixture, and pour in up to 3/4 of the Case.

 I also added in some Buscuit Crumbs and chunks to add texture and extra Bourbon..ness :P

Step 6- When all of the Cases are filled, pop the tray in the Oven for 15-20 Minutes. Make sure you check them after 15 minutes with a Knife or Skewer, it should come out clean, if it doesn't they need a bit more time to cook.

Step 7- Get the Cupcakes out of the oven, they should be springy to the touch!
Leave them to cool on a wire rack for 10 minutes before decorating with the Frosting or the Frosting will melt. 

For the Icing-
Step 1- In a Large mixing bowl, Mix together the Butter, Sugar, Milk and Vanilla. Mix until smooth and creamy and leave to set in the Fridge for at least an hour.

Using a Piping bag, spoon up some of the mixture and place into your piping bag with a large Nossle (depending the look you are going for), then pipe away! 

I went for a Star Tip, and used the Swirl and Cactus looking frosting shape :P

Tuck in and enjoy! 

These cupcakes are very rich, they would be great served with some Dairy-free Icecream...yummmm
