Vegan Soya Cumin Burgers with homemade Mayo!

Vegan, Dairy-free, Wheat-free, Gluten-free, Egg-free



Everyone loves a nice, tasty Burger...but being Vegan and Gluten-free, its very difficult to find ready made Vegan & Coeliac friendly Burgers, so i decided to research making a Burger using my Favourite spices which is also healthy & fully of Protein!

I came up with this Recipe and it works out really well, paired with homemade Mayo which is extremely easy & simple to make, and helps to bring out the aromatic flavours/spices of the Burger. 



This Recipe uses Soya Granules, which if you have never cooked with them before are a Meat Free alternative and are perfect for adding into Bolognese, Cottage Pies...or Burgers for taste & texture!

They are High in Protein (which is important on a vegan diet), Fibre and low in Fat.

The Brand i used is called Granose and can be picked up at Sainsbury's. This product by Granose has been approved by the Veggie Society! whoop

Ingredients (for the Burgers)

-4 Medium Red Potatos (Peeled and Chopped)
-1 Cup of Soya Granules  
-1 Tablespoon of Cumin Seeds
-1/2 Teaspoon of Turmeric 
-6 heaped Teaspoons of Corn Flour
-1 Teaspoons of Fresh Ginger (finely Grated)
-2 Teaspoons of Asafoetida 
-1 Tablespoon of Garam Masala 
-1 Green Chilli (deseeded & finely chopped)
-1/2 Teaspoon of Chilli Flakes
-Pinch of Salt & Pepper 
-1 Tablespoon of Light Olive Oil (for shallow Frying)

Ingredients (for the Mayo)
-1 Cup of Sunflower Oil
-2 Teaspoons of Apple Cider Vinegar
-1/2 Cup of Unsweetened Soya Milk
-Pinch of Salt

Step 1- Line a Baking Tray with Baking Paper and pour on the Soya Granules.
Toast the Granules for 4-5 minutes until Golden, on 160 degrees, Gas mark 4.

Step 2- When cool, place the Toasted soya Granules into a Bowl and cover them with Boiling Water.
Leave to soak for about 5-10 minutes.
Step 3- Peel, wash and Chop the Potatoes and boil on the Hob until soft.
Once the Potatoes have softened, drain and Mash until smooth and place into a Large Mixing bowl.

Step 4- Thoroughly drain the Water from the Soya Granules.
 (A good tip is to squeeze out the water using the back of a spoon whilst its in the Colander)
Place in the mixing bowl with the Potato.

Step 5- Lightly Toast the Cumin Seeds by placing them on the Hob in a Frying Pan (this helps to bring out the aromatic flavour)
This will take around a minute on a low heat.
Step 6- Place the Cumin Seeds into the Mixing bowl along with the Turmeric, Corn Flour, Ginger, Asafoetida, Garam Masala, Green Chilli, Chilli Flakes, Salt & Pepper.
Step 7- Using a Wooden Spoon, mix the Ingredients together until fully combined.
Now we're ready to make PATTIES!

Step 8- Using clean hands, form the mixture into inch thick Patties
Step 9- Heat the Oil in a Frying Pan, then add in the Burgers/Patties.
Shallow Fry for about 4 minutes on each side until fully cooked & golden brown.

Now they are ready to serve.
Serve with a dollop of tasty homemade Mayo!!!!

To make the Vegan Mayonnaise
Step 1- Place all of the Ingredients into a Blender and whizz up.
After 2 minutes in the blender, the mixture will thicken to form a nice saucy side!
I served my Burger with fresh Salad, Mayo in a Gluten-free Chiabatta roll by DS Gluten-free!
A delicious Lunch or Dinner meal which is full of goodness!
