Lentil Salad with Avocado dressing

Vegan, Dairy-free
A mixed Salad is always a delicious & colourful addition to any dish!
Salads are great as they are very versatile and nutritious! 
This recipe is quick & easy and simply yummy!
 Containing fresh Lime, Leaves, juicy Tomatoes with a homemade Avocado Drizzle...it will certainly be a favourite during the summer!  
Avocados are great in protein & vitamins, Nutrients & Antioxidants, which makes this Salad packed full of goodness, and tasty flavour!

Ingredients for the Salad
-1/2 Avocado (diced)
-1/2 Lime (juice)
-250g of Tomatoes
-1/2 garlic clove (crushed)
-1 Red Onion (chopped)
-40g of Spinach
-40g of Rocket
-1 carton of Organic Green Lentils (washed & drained) Already cooked
-1 Teaspoon of White Wine Vinegar
-Pinch of Cumin Seeds
-1 small can of Sweetcorn

Ingredients for the Dressing 
-1/2 Avocado
-1/2 Garlic Clove
-1/4 cup of Dairy-free Yogurt (Pudology Coconut Yogurt)
-2 Tablespoons of Olive Oil
-1/2 Lime
-1/2 cup of Water
-1/4 Teaspoon of Ground Pepper
-Pinch of Salt
-Pinch of Chilli Flakes

To make the Dressing

Step 1- Place the Avocado, Garlic, Yogurt, Oil, Lime Juice, Water, Pepper, salt and Chilli flakes in to a Food processor or blender.
Whizz up until silky smooth.
If the dressing is too thick, add in more water until desired .

To make the Salad

Step 1- Place all of the Salad ingredients into a large mixing bowl, toss until fully combined.

Serve with a drizzle of the delicious Avocado dressing, sprinkling of Sesame seeds and a slice of Lime for a zesty kick!!!
 Also add a extra layer of flavour with Mango chutney!

  1. I love the sound of this dressing. I'm always looking for new dressing recipes because I eat a ton of salads and I like to mix things up. I usually have these ingredients on hand!

    1. Hey, thank you! Avocado dressing is delicious! If you like Guacamole...then this is perfect and a great, healthy, nutritious addition to a salad. I wanted to make this recipe with ingredients that would usually be in a fridge/kitchen so it can be make sporadically. Hope you enjoy! Happy cooking x
