Pesto & Avocado Pizza

Vegan, Dairy-free, Wheat-free, Gluten-free
Pizza is one of my favorite foods, but making it healthy......get on my plate!

I eat Pesto quite regular, but have never made it so i decided to get in the kitchen and whizz up a fresh batch!
Basil Pesto is my favourite in Pasta dishes, so why not add it onto a delicious Pizza!
This recipe is super quick and easy. 
The Pesto contains Pine Nut Kernels. Pine Kernels contain a great amount of Vitamins, Nutrients and are Gluten-free!
They also contain healthy amounts of essential minerals like manganese, potassium, calcium, iron, magnesium, zinc and selenium. They are also a good source of Fatty acids, which is good for maintaining Heart health.

The Base is made using my homemade very simple & tasty Flatbread! It makes the perfect crispy yet soft Pizza base with a light Garlic & Chilli flavour which works SO well with the Basil Pesto & toppings!

This Pizza has a authentic stone baked flavour, which honestly tastes simelar to a Pizza express Pizza!

Pizza Base Recipe
I used my Wheat-free Flatbread recipe, which makes a delicious & crisp, skinny Pizza Base with tons of flavour-

Ingredients for the Pesto Sauce
-3 Garlic Cloves
-2 large handfuls of fresh Basil Leaves
-1/3 cup of Pine Nut Kernels
-2/3 cup of Light Olive Oil
-1/3 cup of Nutritional Yeast
-Pinch of Salt & Pepper

Toppings
-1 Avocado (Sliced)
-1 cup of of Cherry Tomatoes (sliced)
-Pine Nuts (optional)
-Rocket Leaves
-Basil Leaves
-Dairy-free Cheese ( I used Violife)

To make the Basil Pesto 
Step 1- Place the Pine Kernels into a large wok/pan and lightly roast until light brown.
Step 2- Place the roasted Pine Kernels, Garlic cloves, Basil Leaves, Oil, Yeast and seasoning into a food processor/blender and whizz up until smooth.
This will take around 2 minutes on high.
Step 3- Spread a good amount of Pesto on to the Flatbread base and top with your favorite toppings.
I used Basil Leaves, Fresh Cherry Tomatos, Rocket, Pine Nuts and grated Dairy-free/Vegan cheese by Violife!

Step 4- Pop the Pizza into the oven and cook for around 2-5 minutes, or until the cheese has melted!

Step 5- Peel, de-stone and slice the Avocado and place on top of the pizza!

Serve and Enjoy!
