Rasin, Cherry & Almond Slice

Vegan, Dairy-free, Wheat-free, Gluten-free, Yeast-free, Natural Sugar


Since its my dads birthday, i wanted to create a unique recipe with some delicious flavours i know my dad would love, and make it natural.
As cherries are in season and they taste the best around this time of year, i have been incorporating them in to a lot of my desserts!
Raisin, cherry & almond paired with apple, nuts and coconut are a delicious combination!
I also decided to use coconut sugar.
Coconut sugar contains iron, zinc, calcium and potassium along with antioxidants which provide some health benefits.
Coconut Sugar is a lot better for you as it is lower on the glycemic index then regular sugar.

These delicious squares have a light & crumbly biscuit base with a layer of berries, topped off with a layer of 'marzipan'
Utterly delicious!!!

This recipe is 100% Vegan, Gluten-free and contains only natural sugars.
It's very quick and easy to make and has been a hit with my family (and dad especially!)

I can honestly say, i will be making these again very soon! :)

Preparation time: 10 minutes
Baking time: 15-25 minutes

Ingredients for the Base
-50g of ground almond
-50g of ground gluten-free oats
-95g of coconut Sugar
-1 Tablespoon of linseed/flax seeds
-100g of coconut oil
-125g of Plain flour (I used Doves farm gluten-free flour)

Ingredients for the Topping
-1 Tablespoon of ground linseed/flaxseed + 3 tablespoons of water (leave aside to thicken)
-50g of rasins
-50g dried of cherries
-1/2 Teaspoon of almond extract/flavouring
-100g of apple puree (recipe below)
-50g ground almonds
-50g of maple syrup

Optional extras
-Fresh cherries
-Whole brazil nuts
-Crushed walnuts
-Gold leaf (optional)
-Dark chocolate (optional)
...

To make the Base
Step 1- Line a square baking tray with grease proof paper and set aside.

Step 2- Place the ground almond, ground oats, coconut sugar, linseed/flaxseeds, coconut oil and plain flour into a food processor/blender and whiz up until fully combined.
Step 3- Spoon the mixture into the lined/greased tin and press down until smooth and even.

Step 4- Place the base into the oven and bake for 15-20 minutes on 170degrees.
While the base is baking, prepare the topping!

To make the topping
Step 1- Make the apple puree (recipe below)

Step 2- Wash, peel and chop 7 large apples the roughly chop the apples and place them into a deep/large pan along with a squeeze of lemon juice, 1/4 teaspoon of cinnamon and enough water to cover the apples.
Cook until partly soft.
Step 3- Drain the apples from the water and place into a blender/food processor.
Whiz up until smooth and set aside.

Step 4- Mix together the ground flaxseed/linseed with 3 tablespoons of water and allow to thicken up.
This will take around 10 minutes.

Step 5- In a large mixing bowl add in the thickened flaxseed/linseed, apple puree, maple syrup, ground almond and almond extract and stir together until combined.
Step 6- Sprinkle the raisins & dried cherries on the base and cover with the topping mixture.
Step 7- Return the tray to the oven and back for 20-25 minutes or until golden.

Step 8- Place onto a baking tray and allow to cool fully before removing from the tray!

Slice into squares and enjoy!
Why not add a drizzle of dark chocolate, crushed nuts and fresh, juicy cherries!

These squares should be kept in a sealed container in the Fridge to munch on whenever! 
Before serving, leave at room temperature for 5 minutes as this allows the Coconut Oil to soften slightly!
