Quinoa stuffed Avocados

Vegan, Wheat-free, Gluten-free

I wanted to create a healthy lunch option which is packed full of protein!
Guacamole has become one of my favourite side dishes, so i decided to make an Avocado stuffed with spices, garlic, shallot, lime and quinoa.
These flavours go together like a dream and the recipe is delicious and packed full of healthy fats, nutrients, vitamins and protein!
Quinoa is a great, naturally gluten-free alternative to rice and contains 9 essential amino acids which means its a natural superfood which is very high in protein!
Avocados also contain some amazing health benefits!

This recipe is super quick & easy, and makes for a flavourful and very heathy lunch, dinner or snack!
I enjoyed my stuffed avocados with sweet potato wedges, fresh leafy salad and a sprinkling of Violife cheese! 

Preparation time- 5 minutes
Cooking time- Approximately 20 minutes

Ingredients
-100g of cooked quinoa
-500mls of water
-1 tablespoon of light olive oil
-3 shallots (finely chopped)
-1 garlic clove (crushed)
-1 carton of black beans (cooked)
-1 teaspoon of lime juice
-handful of cherry tomatoes (roughly chopped)
-Handful of basil leaves 
-1/2 teaspoon of oregano
-1/4 teaspoon of chilli flakes
-Pinch of salt & pepper

Step 1- Fully wash the quinoa in clean water. 
Repeat 2-3 times until the water is clear.
This removes the bitter taste of the quinoa.

Step 2- Place the washed quinoa in around 500mils of water.
Bring to the boil then simmer for around 20 minutes until the quinoa becomes clear in colour.
Drain fully and set aside.

Step 3- In a large wok/pan, heat up the oil and add in the chopped shallots & crushed garlic.

Cook until golden in colour.
Step 4- Add in the cooked quinoa, lime juice, tomatoes, basil leaves, black beans, oregano, chilli flakes, salt & pepper.
Cook for 5-8 minutes until all the ingredients are combined and heated thoroughly.
Stir with a wooden spoon to prevent sticking! 
Step 5- Wash the avocadoes and cut them in half making sure to remove the stone.

Step 6- Squeeze some lime juice on to the avocados then fill them with quinoa the delicious mixture!


Top off with a dash of salt & pepper, basil leaves and a slice of fresh, juicy lime then serve with your favourite sides!
