Easy chocolate brownies

Vegan, dairy-free, egg-free, wheat-free, gluten-free

So, christmas is coming up and what better way to get in the festive spirit than with a fresh batch of warm, moist, crumbly cherry & nut brownies! yummy

These rich & divine brownies are vegan, wheat-free, gluten-free, egg-free and yeast-free.
They are bursting with flavour & texture. They are fluffy and light whilst being wholesome & filling.

The chocolate i used in this recipe is the 72% dark chocolate bar & buttons by Ombar. It contains 72% cocoa solids for an intensely rich flavour & is dairy-free (vegan). Plus it’s enriched with a healthy dose of live cultures!

These buttons & bar and are a great size for baking & creating masterpieces in the kitchen (and also to have a cheeky nibble on)

What i love most about this recipe is that it can be adapted to your own liking, by adding in more cocoa for a richer flavour, or more nuts & dried fruits for moisture & texture!

Ingredients-
-200grams of dairy-free chocolate ( I used the Ombar 72%  chocolate, as it adds a richer flavour to the brownie)
- 4 teaspoons of cocoa powder
-170grams of self raising flour (I used Doves gluten-free self raising flour)
- 110grams of fine caster sugar
-Pinch of salt
- 1 Teaspoon of vanilla essence
-5 tablespoons of light olive oil
-260ml of dairy-free milk (I used unsweetened soya milk)
-100grams of dried cherries 
-1/4 cup of crushed walnuts
-3 tablespoons of chopped hazelnuts
-Flaked almonds (optional)
-Red currents (optional)
-Powdered sugar (optional)

Step 1- Pre-heat your oven to 180 degrees, gas mark 4.

Step 2- Line a baking tin with grease proof paper ( to prevent the brownies sticking to the pan, we don't want that)

Step 3- Place the chocolate into a glass bowl and place on-top of a saucepan with water filled 2/4 of the way up making a ban marie. Gently simmer until the chocolate has completely melted & is gooey!

Step 4- Sieve the cocoa powder & flour into a large mixing bowl & stir in the salt & sugar. Mix until fully combined, then add 1 teaspoon of vanilla essence & mix in. 
Step 5- Pour into the mixing bowl, the liquids- the melted gooey chocolate, oil & dairy-free milk. Mix until fully combined & looking heavenly. 
Step 6- When the mix is fully combined & smells delicious, throw in the cherries, walnuts, hazelnuts... You could even use crushed pecans or any nuts you like.
At this stage, you will feel the urge to engulf your face in the mixture, but try to resist :P
Step 7- Spoon the delightful mixture into the lined tin, making sure you get into the edges.
Step 8- Pop the tin into the middle of the hot oven for 20-25 minutes
The brownies should be firm & crumbly on the outside, & moist in the middle (doesn't it sound perfect!) yum
To make sure the brownies are cooked, place a sharpe knife or skewer into the centre until it comes out clean.
If they are not fully cooked, pop them in the oven for an extra few minutes.

Step 9- With Oven mittens, take out the tin & place on a wire rack & leave to cool for around 10 minutes. 
Step 10- Cut the brownie into little squares & serve with a light dusting of icing sugar, toasted almonds for crunch and fresh red currents.
You can serve it warm & sticky with some dairy-free vanilla ice-cream to make it even more indulgent!
