
Fritters are a batter, normally deep fried with bread crumbs. I wanted to make some healthier fritters, using all natural ingredients and shallow frying them for a delicious moist flavour, without having them deep fried.
They are sweetcorn, coriander and onion based and i decided to cook them inside an onion ring.
This helps to keep the batter contained into a round shape and also adds extra flavour and texture!
The sweetcorn gives these little bites a nice crunch whilst the onion is moist and sweet, but the chilli flakes give a little kick. yum
This recipe is perfect for a lunch with salad, rice or to use as canape's at a party as they are simple, easy and quick to make.
I combined these tasty fritters with some homemade coriander drizzle!

Preperation- 5 minutes
Cooking time- 15 minutes
Serves- Approximanly 20 medium fritters

Ingredients for the fritters
-330g of sweetcorn (2 small cans, drained)
-1 garlic clove (crushed)
-1/4 cup or a small handful of fresh coriander leaves (roughly chopped)
-1/2 cup of buckwheat flour
-1/2 cup of corn flour
-1 medium white onion (finely chopped)
-2 tablespoons of light olive oil
-1/2 cup of water
-1/4 teaspoon of chilli flakes
-Pinch of salt
-Pinch of black pepper
-2 large white onions (sliced into rings)
Ingredients for the yogurt drizzle
-1/3 cup of plain soya yogurt
-1/2 a lime (juice)
-1/4 cup of fresh coriander (roughly chopped)
-Pinch of black pepper

Step 1- Slice 2 white onions into rings and place aside.
Step 2- Place all of the fritter ingredients into a large mixing bowl and mix until fully combined, like a batter.



Step 3- In a large flat pan, on low/medium, heat up 2 tablespoon of light olive oil.
Step 4- Place the onion rings into the pan and add in some of the sweetcorn mixture, making sure to keep in the onion ring to prevent the batter spilling out.

Step 5- Cook for 15 minutes, or until golden brown making sure to turn them over regularly for an even cook.
Serve warm with a drizzle of coriander yogurt.
Coriander yogurt drizzle
Step 1- Place the soya yogurt, lime juice, coriander, black pepper into a bowl and mix until combined.
Serve the fritters with some fresh salad, a drizzle of coriander yogurt and a slice of fresh lime!
