Tomato & lentil pasta

Vegan, dairy-free, wheat-free, gluten-free, yeast-free, guilt-free
Pasta is a great go-to dish as all you need to do is whip up a batch of delicious sauce and your done!

I wanted to make my own pasta sauce! I have been increasing my protein lately, and decided to create a lentil based sauce as l
entils have a wide range of health benefits and nutrients. Plus they taste delicious! 

I recently came across a company called 'Explore Cuisine' who have a range of healthy & nourishing pastas made out of chickpeas, lentils and rice in the form of penne, spaghetti....

Their products are 100% vegan, non-GMO, Organic and wheat/gluten-free (coeliac friendly).

-1 tablespoon of light olive oil
-1 white onion (finely chopped)
-1 large garlic clove (crushed)
-1 red pepper (finely chopped)
-100g of dried red lentils
-1 tin of chopped tomatoes (400g)
-400ml of water
-1/2 teaspoon of dried basil
1/4 teaspoon of rosemary
-1/2 teaspoon of oregano
-1/4 teaspoon of garlic granules
-1/4 teaspoon of thyme
-Pinch of salt & pepper

-Fresh basil
-Black chia seeds

Step 1- In a large wok/pan, heat the oil

Step 2- Once the oil is hot, add in the onion & garlic, shallow fry until golden brown.

Step 3- Place in the chopped pepper, tomatoes and lentils.
Mix throughly.
Step 4- Add in 400ml of water, along with the dried basil, rosemary, oregano, garlic granules, thyme, salt & pepper.
Stir, then cover with a lid and allow to boil for 10 minutes
Then turn down the heat and simmer for around 20-30minutes, stirring to prevent the sauce from sticking to the pan. Add more water if needed.

Step 5-  When the sauce is ready, turn off the heat and cook your pasta.

Step 6- Fill a large pan with water, add in a pinch of salt and 1 teaspoon of oil.

Heat until boiling.

Step 7- Add in how much spaghetti you want for your meal.

400g serves four people.
This red lentil spaghetti only takes 8-10 minutes until ready, so it's very quick & easy!
Step 8- Drain once the spaghetti is soft & is fully cooked.

Serve with some of the yummy lentil pasta sauce.
I added a sprinkling of chia seeds for added protein and a few leaves of fresh basil for extra flavour!
