RAW cherry & white chocolate cheesecake

Vegan, gluten-free, wheat-free, low sugar

If you are after a stunning dessert for Christmas, i have you covered!
This cheesecake is 100% vegan as well as being raw and contains natural sugars.
It combines cherries, hazelnuts and white chocolate for a delicious & decadent treat.
The base is made with nuts & oats for a crumbly texture. The filling is protein packed due to the cashew nuts and juicy cherries.
It tastes just like a bakewell pie, but healthier! What could be better than that?!
I decided to top off the cheesecake with some coconut cream as it gives the cheesecake a yummy creaminess which goes beautifully with a layer of dairy-free white chocolate on top.
This cheesecake contains 4 layers, but is really easy & fun to make and will go down a treat at a Christmas party or New years events.

Preparation- Overnight
Serves- 12

Ingredients for the base
-200g of hazelnuts
-100g of pitted dates
-50g of oats
-2 teaspoons of almond extract
-2 tablespoons of coconut oil (melted)

Ingredients for the filling
-200g of cashew nuts (soaked)
-50g of pitted cherries
-20g of dried cherries
-2 teaspoons of almond extract
-2 tablespoons of coconut oil (melted)
-1/4 cup of fruit syrup

For the top layer
-Coconut cream
-Dairy-free white chocolate 

Decoration
-Whole cherries
-Dried cherries
-Holly & berries (non-edible)

**You will need to chill 1 can of coconut cream in the fridge overnight**


To make the base
Step 1- Line or grease a cake tin with grease proof paper/coconut oil.

Step 2- In a food processor, add in the hazelnuts, dates, oats, almond extract and coconut oil.
Whizz up until combined.

Step 3- Firmly press the mixture into the greased tin and pop into the freezer.
To make the filling
Step 1- Place the soaked cashew nuts, pitted cherries, dried cherries, coconut oil and syrup into a food processor and whizz up until smooth.
This will take around 5 minutes on high.
Step 2- Pour the filling on top of the base and spread out until even.
Pop into the freezer to set.
Step 3- Once the filling has set, open the can of coconut cream and drain out the liquid, you only want the cream.
Spread the cream onto the filling and set aside.
Step 4- Melt the dairy-free white chocolate and pour onto the coconut cream.
Spread out the white chocolate, then pop back into the freezer to set fully.
This will take around 3 hours+

Decorate with fresh cherries, crushed hazelnuts, dried cherries.
I added on some holly for extra decoration, remove before serving up! 

Before serving, you will need to defrost the cheesecake thoroughly before enjoying.
This should take around an hour.
