I won Food Blogger of the Year 2107 | Blogosphere awards

I can't even believe I am writing this blog post right now. It still seems unreal.
I was nominated, then shortlisted and I WON Food Blogger of the year 2017 at the Blogosphere awards. Yes, we did it!!!! :)

I want to thank you guys for all of your amazing love and support. Seeing people enjoy my content, making my recipes and enjoying them honestly makes me so happy, at the same time as helping & spreading awareness of animal cruelty.

I was shortlisted along with four other amazing food bloggers and it was an honour to be in a category with them!

Blogosphere is a magazine written by bloggers for bloggers and is highly credited in the blogging world.
It's a great resource for all things blogging including travel, food, fashion, photography etc.

Blogosphere held an amazing awards night with live music, flower wall, drinks (including Fentimans which is my favourite and I cannot resist a cherry cola), canapes,  and I received my snazzy glass engraved award.
How stunning is it?! I need to find somewhere nice to showcase it :)
I wore my favourite dress, Ted Baker cotton Cealine dress with my new white Votch watch and Spectrum Collections rose gold heart bag (the lighting at the event makes it look purple)
I want to say a huge thank you to the lovely ladies including Albertine, Sophie, Kat, Holly only to name a few that worked for Blogosphere who were amazing and took such great care of us!
Congratulations to all of the winners, still can't believe I won, yay! 

I can't wait to be featured in the next issue of Blogosphere, watch this space!

Gluten-free lemon pancakes

Vegan, wheat-free, gluten-free

I've been craving lemon pancakes recently and I know it's nowhere near pancake day but it's never too late for pancakes!

I made this delightful (and very satisfying) stack for breakfast and they tasted amazing and I had to share my recipe with you guys to enjoy too.
This recipe is quick and simple and once you have the perfect pancakes ready, the fun part begins, stacking, filling and decorating.

Preparation- 5 minutes
Cooking time- 10 minutes
Makes- Around 10 small pancakes 
Level- Easy

Ingredients
-155g of plain white flour (I used gluten-free)
-1 tablespoon of golden caster sugar 
-1 lemon (juice and zest)
-2 tablespoons of baking powder
-260ml of dairy-free milk (I used unsweetened almond)
-2 tablespoons of olive oil

Toppings
-Fresh Lemon
-Maple syrup
-Powdered sugar
-Chia seeds
-Fresh strawberries
-Dairy-free yogurt
-Fresh raspberries
-Fresh blueberries
...

Step 1- Pre-heat a frying pan with a splash of oil.
This prevents the batter from sticking to the pan.

Step 2- In a mixing bowl, mix together the flour, sugar, lemon zest and baking powder.
Step 3- Pour in the milk, lemon juice and oil.
Make sure you mix this until it's fully smooth, as we don't want lumps in our pancakes.
Step 4- Using a large spoon or ladle, carefully pour a small amount of the mixture into the centre of the hot pan, leave it for a minute or so then flip.
I used a round metal cookie cutter to help create the perfect round shape, just be very careful as the cutter gets very hot.
Only flip when the edges of the pancake look stiff.
Step 5- Repeat this process until you have used up all of your batter and have a tower of delightful pancakes!

I served my pancakes with a drizzle of maple syrup, a dollop of dairy-free soya yogurt, freshly sliced zesty lemon, fresh berries and a sprinkle of powdered sugar.

Serve immediately.

I am so happy with the recent release of Fentimans new & exciting products.

Quick & easy authentic potato curry

I recently came across Zim's Tribe at my local vegan market. Vegan markets can be a great way to discover some new and amazing vegan products & foods.
I LOVE Indian food and all of the delicious spices. I saw the Zim's Tribe stall and it instantly caught my eye. I picked up one of the mild marinade sauces and OH MY GOODNESS, I must say it is one of the best marinades/sauces I have ever tried in my life! It's safe to say, me and my sister are obsessed!

Their marinades range from Mild, Medium, Hot and a new addition... Extra Hot which I don't think I could handle :P

I have found so many delicious treats in here that I am obsessed with, especially the onion bruschetta and Eli's bar.
We used to buy Garlic bruschetta all the time when I was younger so I am very happy to have rediscovered them. They taste amazing on their own, but out of this world paired with hummus and dips! Perfect for sharing or serving at parties etc...

The candy in this box is insane! From caramels to peanut chocolate bars and even a vegan waggon wheel! 
I especially love the Vantastic Foods coconut bites, these little dark chocolate balls with freeze dried coconut chunks are scrumptious! The dark chocolate is smooth and rich, paired with sweet coconut...they are like little bounty bar balls. I love them. They would even be great to decorate a coconut cheesecake!

My mum and sister have been nibbling on the caramels and there are only 3 left!! I guess they like them, haha.

Easy pineapple sorbet recipe

Vegan, gluten-free, wheat-free, natural sugars
Knowing how to make the best (and easiest) homemade sorbet will be a life saver, especially perfect for cooling down on a hot, sunny day! 

This recipe has been inspired by the delicious vegan pineapple Candy Kitten sweets.
Candy Kittens are an adorable gourmet sweets company who have some vegan options, including pineapple and sour apple! How yummy do they sound?!

This unique 3 ingredient sorbet is vegan and contains natural sugars which mean's it's guilt free! Yay!!!

It's perfect for sharing, throw a few spoons in it and tuck in! 

It would be a real eye catcher at a BBQ, birthday etc :)

Ingredients
-500g of frozen pineapple
-200ml of almond milk
-1 tablespoon maple syrup
-1/2 lemon (juice)

To serve (optional)

-1 pineapple
...

Step 1- Place the frozen pineapple, almond milk, maple syrup and lemon juice into a blender and whizz up until combined.

Step 2- Place the sorbet into a sealed container and pop into the freezer to thicken.
This will take around an hour.

Step 3- To serve, I cut off the top of a pineapple, sprayed it with edible gold spray and filled it up the delicious pineapple sorbet!


Store the sorbet in a sealed container in the freezer
