Salted caramel pretzel cake recipe

Happy 1st December. I can't believe we are only 24 days until Christmas!!!!
To celebrate, I've created this show stopper of a cake. A delicious, spongy and scrumptious vanilla cake, with a pretzel base, a centre of homemade caramel sauce, topped off with light & fluffy caramel buttercream, caramel buttercream peaks, festive pretzels and a light sprinkle of sea salt. Are you drooling yet? It sounds like its really technical, but it's honestly super easy to make.

Who doesn't love a good ol' mousse. I've not actually enjoyed a mousse since being vegan, which has been about 3 years now as I didn't think you could enjoy them without egg whites, buy boy was i wrong! 
This mousse uses the aquafaba (aka chickpea brine), which acts as egg white usually found in original 'dairy' mousses.

The cake is ultra moist, alongside the creamy chocolate filling, it's very moorish.
I am so impressed with the cookie dough frosting. I love combining red velvet with cake & cookie!
This cupcake is taste and gets two thumbs up from me! I highly recommend it! :D

Mixed berry smoothie bowl recipe | ft Pacifica

Lately, I've been a little obsessed with smoothie bowls on Instagram, and had to create my own.
I've created this delicious mixed berry smoothie bowl, which is creamy and packed full of fresh, fruity flavour.
I've collabed on this recipe with Pacifica Beauty.
Pacifica is a cosmetics and haircare company. Their products are 100% vegan, natural & cruelty-free.

I am the biggest fan of Pacifica products and created this pretty mermaid smoothie bowl based on their Mineral highlighter. It tastes incredible and how pretty does it look, I'm obsessed!!!
Also, can we take a second to appreciate how cute this highlighter is! Loving the packaging (as always with Pacifica products) but the pigment is lovely! It's a perfect shade for my pale skin.
This smoothie bowl is quick & easy to make, healthy and only requires few 'easy to find' ingredients to make it. PS- all of the fun is all in the decorating.

Preparation- 5 minutes
Freezing time- Overnight
Serves- 2
Level- Easy

-2 bananas (Frozen)
-20g of raspberries (Frozen)
-10g of strawberries (Frozen)
-1 tablespoon of almond milk
-1/2 teaspoon of vanilla bean paste (You can use vanilla extract)
-1/4 teaspoon of pink food colouring (optional)

To garnish (optional)
-Dragonfruit balls
-Vegan marshmallows 
-Vegan sprinkles

Step 1- Place the frozen bananas, mixed berries, almond milk, vanilla extract into a food processor/blender and whizz up until creamy. Add in the pink food colouring for a brighter pink colour (Optional).

Serve in a bowl and top off with some strawberries, dragon fruit balls, blackberries, marshmallows and sprinkles.

Best served fresh & store in the freezer like you would ice cream.
