Avocado truffles (Ft Loving Earth)

Vegan, gluten-free, natural sugars, quick & easy
As it's coming up-to Valentines day & Easter, truffles are a perfect gift. These truffles are 100% vegan and ultra creamy, no-one would ever guess they are made from avocados!
Avocados create a silky & delicious flavour and texture without the use of dairy or cream making them healthier.

Avocados contain a whole range of health benefits. They are very nutritious and packed full of goodness including vitamins, fibre, magnesium, potassium, antioxidants etc...

Did you know, people who eat avocados tend to be healthier...load up on these truffles then :P

I recently came across a company called Loving Earth at Vegan Life Live and fell in love with their vegan caramel chocolate bar. I wanted to included their creamy chocolate into a recipe and decided to include them into some yummy truffles.
Truffles are very quick and simple to make and taste incredible.
I used 3 different flavours of the Loving Earth chocolate bars to create 3 different truffles:
All Loving  Earth products are suitable for vegans and are naturally sweetened.
As i didn't know what to coat the caramel truffles with, i brainstormed and i thought i would top them off with a drizzle of my raw & homemade caramel date sauce. This sauce is divine. It has a sweet flavour and gives the truffles an extra caramel touch, i love it!

Preparation- 15 minutes
Makes- Approximately 45 
Level- Easy

Ingredients for the hazelnut
-1 ripe avocado
-2 tablespoons of maple/fruit syrup 
-3 tablespoons of cacao powder
-Pinch of salt
-2 tablespoons of coconut oil (melted)

Ingredients for the mint
-1 ripe avocado
-2 tablespoons of coconut oil (melted)
-3 tablespoons of cacao powder
-3 tablespoons of maple/fruit syrup
-Pinch of salt

Ingredients for the caramel
-1 ripe avocado
-2 tablespoons of coconut oil (melted)
-3 tablespoons of cacao powder
-2 tablespoons of maple/fruit syrup
-Pinch of salt

Step 1- Place the avocado, syrup, cacao powder and salt into a food processor/blender and blend until smooth.
Step 2- Place the coconut oil and chocolate into a saucepan over a medium heat. Melt and add to the food processor/blender and combine.
Step 3- Transfer the mixture into a container and place into the freezer to firm up.
This will take around 30 minutes.

Step 4- Remove the container from the freezer and scoop the mixture and roll into truffles.
Place onto baking paper, repeat for the whole mixture.
Decorate with a dusting of cacao, drizzle chocolate etc...
Repeat for the other flavoured truffles doing the exact same steps.

I decorated the mint truffles in cacao powder with some mint leaves for colour.
I decorated my caramel truffles with a drizzle of my homemade raw date caramel sauce.

I rolled the hazelnut truffles in ground hazelnuts.

Store in a sealed container in the freezer.
Leave at room temperature for 5- 10 minutes before serving.

  1. I really want to try these, I am not the biggest fan of maple syrup is there any other vegan alternatives? can you taste the maple syrup much?

      You can use Maple, agave nectar, fruit syrup...any vegan syrup :) You cant taste the maple but it gives a nice sweet flavour :) x
