Raw lemon bars

Vegan, wheat-free, gluten-free, natural sugar, quick & easy
I have been inspired to make these delightful raw lemon bars by the new, limited edition Nakd lemon drizzle snack bars. Oh my, these taste incredible so i wanted to make my own.

Lemon is such a fresh and timeless flavour which works amazingly in protein bars or energy snacks, as its not only packed full of goodness but zesty flavour which tastes divine.
They taste so 
These are a delicious, healthy snack great if you are on a budget as it costs well under £5.00 to make and you can make 9 large squares like i did, or halve them to make 18 smaller bars which are the perfect on the go size.
These bars are super simple to make and only include 6 ingredients! What could be better?!

Preparation- 5 minutes
Freezing time- 30 minutes
Level- Easy

Ingredients
-125g of gluten-free oats
-200g of dates (de-stoned)
-1 tablespoon of vanilla extract
-Juice & zest from 2 small lemons
-110g of unsweetened desiccated coconut
-Pinch of salt

Step 1- Line a square baking tray with grease proof paper.

Step 2- De-stone the dates and place them into a food processor along with the lemon juice, zest and vanilla extract. 
Whizz up until combined and set aside.
Step 3- In a mixing bowl, combine the desiccated coconut, oats and salt.

Step 4- Place the date/lemon mixture into the mixing bowl and mix until fully combined.
Step 5- Pour the coconut base mixture into the lined baking tray and press down until it is compact.
Pop into the freezer to set.
This will take around 30 minutes or an hour in the fridge.
Step 6- Once the lemon slab has set, carefully cut them into bars and place onto a serving plate along with a sprinkling of icing sugar or ground oats, desiccated coconut and a slice of fresh, juicy lemon.


Store in a sealed container.
