Chocolate orange flamingo doughnuts

Vegan, gluten-free, wheat-free, egg-free
I love making doughnuts, especially decorating! Who's with me?!
I have seen that flamingo inspired foods have been trending and it inspired me to make my own!

I made these adorable little flamingo doughnuts, which are a vegan & gluten/wheat-free chocolate doughnut with a pastel pink, orange flavoured glaze with gold leaf. Utterly delicious and instagrammable
They would be perfect for birthday parties, special events or a weekend bake, as they are so yummy!
I used fizzy water as the egg replacer as I have found this to work a treat!
A batch can be whipped up in under an hour, what's not to love?!
Happy baking :)

Preparation- 5 minutes
Baking time- 10-12 minutes
Makes- 15-20 small doughnuts
Level- Easy

...
Ingredients for the doughnuts
-250g plain white flour (I use gluten-free)
-65g of golden caster sugar
-20g of cocoa powder
-1 & 1/2 teaspoon of baking powder
-Pinch of salt
-350ml of fizzy water
-1/2 teaspoon of apple cider vinegar
-100ml of olive oil

Ingredients for the glaze
-200g of powdered sugar/icing sugar
-2-3 teaspoons dairy-free milk (I use almond)
-1 teaspoon of orange extract/flavouring
-1/4 teaspoon of pink food colouring
...

To make the doughnuts
Step 1- Preheat the oven to 180 degrees c and grease a doughnut tin with oil or vegan butter.

Step 2- In a large mixing bowl, add in the flour, sugar, cocoa powder, baking powder and salt.
Mix until combined.
Step 3- Add the fizzy water, vinegar and oil and mix until fully combined.
Step 4- Add the batter into a piping bag and snip off the tip.
Pipe the mixture into the doughnut tins 3/4 full.

Step 5- Pop the doughnuts into the oven and bake for 10-12 minutes.
Make sure they don't burn on top.
You will know they are done when you put a knife or skewer in and it comes out clean.
Place the doughnuts onto a cooling rack and cool fully before icing!

To make the glaze
Step 1- Place the sugar, dairy-free milk, orange extract, and pink colouring in a bowl, mix until smooth and shiny.
Pop into the fridge to set for 5 minutes.
Step 2- Dip the doughnuts into the glaze and place back on a cooling rack.
This is the time you can decorate your doughnuts with sprinkles, coconut, chocolate.... anything you fancy!
I cut out some flamingo shapes and attached them onto the doughnut with some extra frosting. So easy, but effective.
Step 3- Pop the tray into the fridge for 5 minutes, to allow the glaze to set.

Store these yummy doughnuts in a sealed container to keep fresh & delicious!
Best enjoyed fresh, the day of making!!!
