Vegan, natural sugar, high protein
Chia seed puddings have been having their spotlight recently, probably because they are limitless and an amazing superfood.
I have chia seeds on everything, breakfast, lunch, dinner, in smoothies etc....I just purely love them!




I tried the Chia Mango Pot from Pret A Manger and really enjoyed it and decided to make a homemade version with passionfruit.
Passionfruit has a tropical and fresh flavour which is very refreshing to wake up to.
A healthy protein packed start to the day!!!
Preparation- 5 minutes
Chilling- 1 hour
Serves- 3-4
Level- Easy

Ingredients
-200ml of dairy-free milk (I use unsweetened almond)
-8 tablespoons of chia seeds
-1 tablespoon of passionfruit coulis
-1/4 teaspoon of maple syrup
To serve
-Passionfruit compote
-Desiccated coconut
-Fresh berries
To serve
-Passionfruit compote
-Desiccated coconut
-Fresh berries

Step 1- In a large bowl, add in the dairy-free milk, chia seeds, passionfruit coulis and maple syrup. Stir and leave to jellify/thicken. This will take about 1 hour.
Spoon into a serving glass, top off with more passionfruit coulis, a sprinkle of desiccated coconut and berries.
Best enjoyed fresh.
