Gluten-free double chocolate chip cookie recipe

Vegan, gluten-free, wheat-free, egg-free

Who can say no to crumbly chocolate chip cookies?! Especially when they are vegan!!!

These are probably the best chocolate chip cookies I have had in a long time!
They are soft, crumbly and almost melt in your mouth. Perfect dunked into some almond milk....YUM!

They are also gluten-free so everyone can enjoy these bites of deliciousness!
I used the delicious Moo Free baking drops for the chocolate chips and Neals Yard Cocoa powder which is amazing.

As it states on the Neals yard website:
"Rebalance your body and mind while increasing relaxation with this comforting blend of mood-enhancing cocoa. Contains B vitamins and adaptogens – rhodiola, shiitake mushroom, maca and ashwagandha – to help you adapt to daily stresses and strains."

It's amazing and works so well in this recipe! It brings the chocolate flavour to a whole new level!
This recipe is quick, easy and simple and will go down a storm as a snack or served at a special occasion!

Preparation- 10 minutes
Baking time- 8-10 minutes
Makes- 15+ cookies
Level- Easy

Ingredients
-240g of vegan butter/margarine
-150g golden caster sugar
-1 teaspoon of vanilla extract
-1 egg substitute (I use VeganEgg)
-300g of plain flour (I use gluten-free)
-1 tablespoon of cocoa powder (I use Neals Yard Rebalance blend)
-1 teaspoon of bicarbonate of soda
-Pinch of salt
-1/2 pack of chocolate chips (I use Moo Free baking drops)

Step 1- Preheat your oven to 190 degrees c and line a baking tray with grease proof paper.

Step 2- In a mixing bowl, combine the butter/margarine, sugar, vanilla extract and egg substitute.
Step 3- Mix in the flour, cocoa powder, bicarbonate of soda and salt.
Step 4- Fold in the chocolate chips.

Step 5- Roll the dough into balls and place onto the lined baking tray, a few inches apart and flatten to make larger cookies.
Pop into the oven and bake for 8-10 minutes.
Serve warm with a drizzle of melted Moo Free chocolate. 
Best served fresh, day of making or store in a sealed container.
