How to make vegan lemon curd

Vegan, gluten-free, wheat-free, egg-free

The sweet smell of lemon curd....yum!
I love refreshing and zingy lemons in anything, but my favourite has to be lemon curd.
Lemon curd is super simple to make and is delicious on toast, in cakes or adding into buttercream.

This recipe is quick & easy and only requires a few 'easy to find' ingredients to create a thick & creamy lemon curd!

Preparation- 10 minutes
Cooking- 5-8 minutes
Makes- 1 jar
Level- Easy

Ingredients
-200ml of lemon juice
-140ml of water
-330g of golden caster sugar
-4 & 1/2 tablespoons of corn starch
-Pinch of salt
-2 tablespoons of dairy-free margarine/butter
-6 tablespoons of almond milk (I use unsweetened)

Step 1- Place the lemon juice, water, sugar, corn starch and salt into a saucepan.
Step 2- Heat over medium/high until boiling, stirring constantly.
This will take around 5-8 minutes.

Step 3- Bring to the boil. Keep stirring, it will thicken and turn clear.
Step 4- Remove the thick curd from the heat and place into a heatproof bowl and mix in the dairy-free margarine/butter and dairy-free milk.
Set aside to cool then place into the fridge.
It will thicken as it cools.
Store in the fridge.
