Vegan polenta chips recipe

Vegan, gluten-free, wheat-free

Polenta chips have become my favourite side, ever since trying them at Pizza Express recently (minus the cheese). Oh my goodness, they are delicious. They are crispy on the outside and soft on the inside. Honestly they are super tasty!!!

Polenta is made from cornmeal.
Homemade polenta is easy to make, but as I had a spare pack of ready made polenta, I thought this was a good idea to show how you can make super tasty polenta chips in no time at all!

Preparation- 5 minutes
Cooking time- 20-25 minutes
Level- Easy

Ingredients
-1 pack of polenta (500g, i use Italfresco)
-2 tablespoons of light olive oil
-1/2 teaspoon of rosemary
-1/4 teaspoon of salt
-Pinch of pepper
-Pinch of chilli flakes
-Garlic oil (Get my recipe here)

Step 1- Pre-heat your oven to 220 degrees c and place a metal cooling rack on top of a baking tray.

Step 2- Slice the polenta into chips/wedges and place into a mixing bowl.
Step 3- Add in the oil, rosemary, salt, pepper and chilli flakes.
Toss to coat the polenta chips.
Step 4- Place the chips onto the rack and pop into the oven and cook for 20-25 minutes, until crispy and golden brown.
