Vegan, gluten-free, wheat-free
What sounds better than waking up to a stack of waffles, especially when they taste like a cinnamon roll. Sign me up!
I recently bought a waffle maker after seeing some delicious waffles on instagram and just had to make some myself.

They are full of flavour, texture and protein.
I even added a light drizzle of vanilla glaze and a dash of ground cinnamon ontop to bring out the cinnamon roll flavour & look.
I am so happy with how they turned out! Perfect cozy bake for autumn!!!

These waffles are super quick & easy to make and taste delicious along with being fluffy, just like an authentic cinnamon roll, minus the butter and sugar!
I only added in natural sugars to these waffles along with being gluten/wheat-free and vegan. They are full of flavour, texture and protein.
I even added a light drizzle of vanilla glaze and a dash of ground cinnamon ontop to bring out the cinnamon roll flavour & look.

Ingredients for the waffles
-380ml of almond milk
-1 teaspoon of apple cider vinegar
-80g of maple syrup
-50g of light olive oil
-1/4 teaspoon of vanilla extract
-25g of gluten-free oats
-300g of plain flour (I use gluten-free)
-1 & 1/2 teaspoon of baking powder
-1 teaspoon of ground cinnamon
Ingredients for the glaze
-100g of icing sugar
-1 teaspoon of vanilla extract
-2 tablespoons of vegan butter (I use Tomor)
-20ml of dairy-free milk (I use unsweetened almond)

To make the waffles
Step 1- Combine the almond milk and apple cider vinegar in a bowl and set aside for 5 minutes.
This creates a buttermilk.
Step 2- Add in the maple syrup, oil, vanilla extract and mix until combined.
Step 4- Combine the wet with the dry ingredients and mix until smooth.
Step 5- Lightly coat your waffle maker with oil spray or vegan butter.
Serve immediately with a drizzle of glaze.
To make the glaze
Step 1- Place the icing, vanilla, butter, and milk into a food processor/blender and whizz up until smooth.
Add as much milk as needed for a smooth glaze.
Step 2- Smooth over the rolls until fully coated.
Serve while warm.
You could even serve them with a drizzle of maple syrup, dusting of cinnamon or serve with cinnamon sticks for garnish.
