Healthy 5 minute avocado toast recipe

Vegan, gluten-free, wheat-free, full of protein.

Avocado toast is one of my favourite brunch options.
This healthy 5-minute avocado toast is perfect for a filling brunch or lunch as is packed full of protein, nutrients and is super quick & easy to make. 

Pesto and avocado paired together are a match made in heaven! You have to try this combination!

Preparation- 5 minutes
Serves- 2
Level- Easy

Ingredients
-2 slices of wholemeal bread (I use gluten-free)
-1 ripe avocado
-1 garlic clove (crushed)
-1/2 lime (juice only)
-1 teaspoon of red pesto
-3 cherry tomatoes
-Pinch of chilli flakes
-Handful of watercress
-Chia seeds

Step 1- Place the avocado into a bowl and mash with a fork.

Step 2- Crush a garlic clove and add it into the mashed avocado along with the lime juice.

Step 3- Toast the bread until brown and crisp and spread the avocado over the top, and serve with a drizzle of red pesto, cherry tomato slices, chilli flakes and watercress.
I also added on some chia seeds for extra protein.

Best eaten day of making.
