Strawberries & Cream French Toast recipe

Vegan, gluten-free, wheat-free, quick & easy.

There isn’t anything better than breakfast in bed, is there?

French toast is the perfect option as it’s quick, easy and tastes absolutely delicious.

This isn’t any old french toast, this french toast is flavoured with strawberry powder, served with fresh strawberries, maple syrup, desiccated coconut and coconut cream. How yummy does it sound?!

French toast is usually made with dunking bread into egg & milk, but making a delicious vegan version is quick, simple and requires no animal ingredients! All round YAY! Plus is absolutely delicious!

Preparation- 5 minutes

Cooking time- 5-8 minutes

Serves- 5+

Level- Easy

Ingredients

-Sliced bread (I use Schär, gf sliced bread)

-1 teaspoon of coconut oil

-150ml of almond milk

-2 tablespoons of gluten-free plain flour

-1 tablespoon of cinnamon

-1 tablespoon of nutritional yeast powder

To serve

-Strawberry powder

-Fresh strawberries

-Desiccated coconut

-Maple syrup

-Coconut cream

Step 1- In a mixing bowl, combine the almond milk, flour, cinnamon and yeast until combined.

Step 2- In a large frying pan, add in a teaspoon of coconut oil and heat on low.

Step 3- Slice the bread (around 1-2 inch thick) or use pre-sliced thick bread and dunk the bread into the mixture.

Step 4- Once the pan is hot add the bread and cook for a few minutes on each side until golden in colour and crispy.

Serve with a dusting of strawberry powder, juicy strawberries, a drizzle of maple syrup, unsweetened desiccated coconut and some coconut cream.

You could always serve with ice-cream or coconut whip.

Best enjoyed fresh/warm.
