Easy vegan jackfruit quiche recipe | Ft Natures Charm

Vegan, gluten-free, wheat-free, easy.

Quiche is always a joy to make and everyone's favourite. The flavour, texture and creating it, I just love!
It's hearty, warming and full of delicious flavours.
This quiche has a shortcrust pastry case, filled with jackfruit and tofu and topped with pastry decorations. They'd be great serve at Christmas parties etc.
This was my first time using jackfruit in a recipe and I am pleasantly surprised by it.....it's absolutely scrumptious!

I used the Natures Charm 'Young green jackfruit confit'.
Jackfruit is a great meat substitute in food like quiches, pies, tacos etc.
It's quick & easy to cook with. It comes in small tins which when used, breaks apart making it a perfect pulled-meat substitute.
This quiche is not only packed full of delicious flavour but is full of natural fats, proteins and vitamins.
The delicious jackfruit is complemented by cheesy, and creamy tofu, caramelised onion and a crumbly pie crust. 
It's perfect served with homemade chips, fresh salad or a rice dish.
It would even make a delicious addition to a festive meal.

Preparation- 30 minutes
Cooking time- 30-40 minutes
Serves- 4 small quiches or one large quiche

Ingredients for the filling
-1 tablespoon of oil (for frying the onion) I used a light olive oil.
-1 large onion (finely chopped)
-1 red banana pepper (finely chopped)
-2 cans (200g) of jackfruit (I use Natures Charm)
-1 box (349g ) of firm silken tofu
-1/2 lemon (Juice only)
-2 tablespoons of nutritional yeast
-1 tablespoon of tahini
-4 tablespoons of dairy-free milk (I used unsweetened almond milk)
-Pinch of salt
-Pinch of pepper

-Shortcrust pastry

To make the filling
Step 1- Preheat your oven to 200 degrees c and line 4 mini quiche tins or one large quiche tin with greaseproof paper or oil.

Step 2- Line the tins with shortcrust pastry and trim off any excess.
Prick the bottom of the cases and bake them blind for around five minutes.
Then take them out of the oven and set aside.

Step 3- In a large wok/pan, add in oil and allow to heat.

Step 4- Add in the onion and cook until golden in colour and caramelized.
This will take around 5-8 minutes. Make sure to keep stirring them as you don't want them to stick & burn.
Step 5- Add in the chopped pepper and fry for a further 3-5 minutes until soft.

Step 6- Add in the jackfruit and fry for a further 5 minutes.
Step 7- In a food processor/blender, add in the silken tofu, lemon juice, nutritional yeast, tahini, dairy-free milk, salt and pepper.
Whizz up until smooth and creamy.
Step 8- Fold the jackfruit mixture into the tofu mixture to combine.

Step 9- Fill the pastry cases with quiche filling.
You can cut out pastry decorations to top off the quiches to make them decorative (optional).

Step 10- Pop the quiches into the oven and cook for around 15 minutes.


You can enjoy them warm straight from the oven or cold with a salad.
Store in a sealed container in the fridge. 
Best eaten within two days of baking.
