Vegan Cheesebake, with Spicy Cauliflower & Broccoli

Vegan, Dairy-free, Wheat-free, Gluten-free

I was kindly sent some delicious Kale Chips from a company called Inspiral and decided to incorporate them into a Recipe.
I thought that a Vegetable Bake would be a good idea so i could use them as a tasty & crunchy topping.
I love Broccoli as it's a wonderful 'Super Food' and it has a lot of Health Benefits.
Broccoli and Cauliflower compliment each other really well and paired with a Dairy free Cheese Sauce, it makes a extremely yummy, quick & easy dish!

- 1 Cauliflower (Cut into florets)
-1 Broccoli spear (Cut into florets)
-Pinch of Chilli flakes
-Dairy Free Cheese Sauce (I used Free and Easy Dairy Free Cheese Sauce Mix)
-Crispy Baobab and Onion Kale Chips from Inspiral Visionary Foods
(Optional, you can use plain Crisps/Chips)

Step 1- Prepare and wash the Vegetables.

Step 2- Place the Cauliflower florets in boiling water to part boil.
Step 3- Simmer the Cauliflower for around 8 minutes.
Add it into a steamer with the Broccoli, then steam for about another 10 minutes until the Vegetables are tender.

Whilst the Vegetables are steaming, you can prepare the sauce.

Step 4- You will need 600mls of Water to around 8 Teaspoons of the Sauce mix.
Mix the Sauce mix with a small amount of cold filtered Water, then add it to the rest of the water, mixing it thoroughly.

Step 5- Sprinkle the Chilli flakes to the sauce mix.

Step 6- Place the Sauce onto the hob and gently heat stirring continuously until the Sauce has thickened.

Step 7- When the Vegetables are ready, place them into your favourite Casserole dish and pour over the delightful, cheesy Sauce.

Step 8- Crumble the Kale chips over the Cauliflower and Broccoli Bake.
This adds texture and added flavour!
Step 9- Place the Bake in the Oven at 180degrees for 10 minutes
(Make sure you don't burn the Kale chips)
You can always place some foil over the top to stop them from burning.

Step 10- After about 10-15 minutes take the Bake out of the oven. Be very careful as the dish will be boiling hot!

The Bake is ready to serve straightaway.

I served mine with homemade Sweet Potato chips and steamed Carrots.
This Recipe makes a perfect flavourful & Nutritious meal which the whole family can enjoy in no time at all!

The Chilli flakes add a spicy kick to the dish with the Onion flavoured Kale chips adding Crunch.
All the flavours go well together.
