Avocado Spaghetti

Vegan, Egg-free, Gluten-free, Wheat-free

Pasta is always my go-to quick & easy meal option!
Spaghetti has quickly become one of my favorite lunch time dishes, paired with a tasty Sauce!
I decided to make a healthy Avocado pasta sauce as Avocados are coming into season. They taste delicous & have a number of health benefits!

This dish is super creamy & moorish and is a nice change from the usual 'tomato' pasta sauce!
It would taste even better with a sprinkling of homemade Vegan Cashew Parmasan Cheese or even pine nuts.

This recipe is very creamy & light, but there is a nice kick with the Chilli flakes which i feel makes the sauce!

-350g of Gluten-free Spaghetti (I use Doves farm)
-2 Avocados (de-stoned & peeled)
-2 medium Shallots
-1 Lime (Juice)
-1 Garlic Clove (crushed)
-1/4 cup of Light Olive Oil
-1/2 Teaspoon of Chilli Flakes
-Pinch of Salt & Pepper
-Coriander (optional)

Step 1- In a large pan on the hob, pour in water to the top & sprinkle in some Salt & a 1/2 Teaspoon of Olive Oil

Step 2- Once the water has come to the boil, place in the Spaghetti.
Step 3- Whislt the Spaghetti is cooking, make the Sauce.

Step 4- Place the Avodacos, Garlic, Shallots, Lime Juice, Chilli Flakes, Salt & Pepper and Oil into a food processor and whizz up until smooth.
This will take a few minutes.
Step 5- Once the Spaghetti is soft & has fully cooked, drain the Pasta and place into a large wok.

Step 6- Add 1/2 a cup of Boiling water to the Avocado Sauce and mix the sauce into the steaming pasta.

Step 7- Gently heat until the desired temperature.
Serve whilst warm and enjoy!

I served my Spaghetti in Avocado Skins with a pinch of Salt, pepper & Chilli flakes and some Coriander leaves.....utterly delicious and very moorish!
You could even serve this dish with a homemade Gluten-free Flatbread-
