How to make chocolate & strawberry truffles

Vegan, Dairy-free, Wheat-free, Gluten-free
Mini Strawberry, Chocolate Cupcakes, with a delicious Strawberry Center with a whipped Strawberry Frosting!

So it was recently my birthday, and my mum decided to make me some homemade Truffles!
She came up with the idea of making these adorable (and instagram worthy) mini cupcakes made out of Dairy-free Chocolate, with a Strawberry puree filling, topped off with a swirl of Strawberry whipped frosting!
They are not sickly sweet, but have a mouthwatering natural fruitiness!
They honestly taste amazing and would be lovely served for Birthdays, Events, Summer name it!
This Recipe is very quick & easy, yet fun to make & create.
 Perfect for the whole family to get involved in!

-2 Bars of Dairy-free Chocolate (I used Dark Kinnerton)
-1 Punnet of Fresh Strawberries
-1 Lemon
-Vegan Frosting

You will need
Chocolate Mould 

Step 1- Pop the Chocolate into a Bowl on-top of a saucepan with boiling water, creating a Banmarie and allow the chocolate to fully melt.

Step 2- Carefully pour the Chocolate into the Chocolate tray/Mould.
Leave for a few minutes then tip upside down on a plate & place into the Freezer.

Step 3- Place the strawberries & Lemon juice into a Food Processor/Blender, and whizz up until Pureed.

Step 4- Once Pureed, place into a small saucepan, and heat on low.
Keep stiring the mixture with a wooden spoon until the puree is around 1/4 of the initial amount.

Step 5- With a spoon, place some of the Strawberry mixture into each Chocolate Mould and place back into the Freezer to fully set.
This will take approximatly 1 hour.

In the meantime, make the Strawberry Frosting!

Decorate these adorable, tasty chocolates with a swirl of the Strawberry Frosting! 
You can even sprinkle on some Freeze dried strawberries, Sprinkles, some Grated white chocolate..the list goes on!
