Herby Potato bites

Vegan, Wheat-free, Gluten-free
France is where i first discovered herby potatoes!
I love to up some Herby potato bites and enjoy them with fresh salad, sitting in the glorious sun.....bliss!
I decided to re-create them at home using ingredients that can be found in your kitchen cupboard!
These little bites may be small, but they pack a whole lot of flavour!
What i love most is that are crispy on the outside, but fluffy and smooth in the inside.
If you like Potatoes, these will be your new favourite! 
You can also give this recipe a go with sweet potato! They taste just as yummy!

Preparation time- 5 minutes
Cooking time- 35-40 minutes

-685g of red potatoes (chopped into around 1inch cubes)
-1 teaspoon of garlic granules or powder
-2 teaspoons of mixed herbs
-1/4 cup of light olive oil
-2 shallots (roughly chopped)
-Few sprigs of rosemary
-5 fresh chives (chopped)
-Pinch of salt & pepper

Step 1- I lined a baking tray with grease proof paper and set the oven to 180 degrees.

Step 2- Roughly peel the potatoes and chop them into 1inch cubes.

Step 3- Place the potato cubes into a large mixing bowl along with 1/4 cup of oil.

Step 4- In a little bowl, combine the garlic granules/powder, mixed herbs, salt and pepper.

Step 5- Add the herby mixture to the potatoes and toss until evenly coated with the delicious herbs!

Step 6- Pour the potatoes onto the tray. 

Add on a few sprigs of rosemary, shallots & sprinkle over the chopped up chives and finish with an extra dash of salt & pepper.
Step 7- Place the tray into the oven and cook for 35-40 minutes.
Make sure to check the potatoes every 10 minutes , turing them over to prevent burning/sticking! This is also to give the potatoes an even coating/cooking.

Step 8- Once they are golden in colour, remove the tray from the oven and serve!

I served my herby potatoes with my homemade gluten-free falafel's and fresh salad..YUM!
