Gluten-free gingerbread men

Vegan, wheat-free, gluten-free, dairy-free, egg-free, low sugars

I've been getting into the Christmas spirit with festive spices this month already!
Here today, i present... the best vegan & wheat-free gingerbread cookies! 

These adorable gingerbread men are perfectly spiced and are very simple & easy to make! 

These gingerbread men cookies contain natural sugars and ingredients. I decided to use half coconut flour & half gluten-free plain flour as these give the cookies a crumbly texture. Delish!
They are topped off with a vanilla & cinnamon icing, which gives these cute cookies extra flavour and brings them to life (not irl) :P

Preperation- 5-8 minutes
Cooking time- 12-15 minutes
Makes- Approxiamtly 15 medium gingerbread men

Cookie ingredients
-170g of coconut flour 
-150g of gluten-free plain flour
-1 tablespoon of ground ginger
-1/4 teaspoon of ground nutmeg
-1 teaspoon of cinnamon
-1/4 cup of maple syrup
-1/2 teaspoon of bicarbonate of soda
-3/4 cups of dairy-free margirine (I used soya)
-1/2 cup of dairy-free milk, i used soya milk (Plus more if needed)

Icing ingredients

-1 cup of icing sugar
-1/4 teaspoon of vanilla
-1 tablespoon of dairy-free milk
-Pich of cinnamon

Step 1- Pre-heat your oven to 180 degrees and line a large baking tray with grease proof paper.

Step 2- Mix together all of the ingredients into a large mixing bowl and mix with a wooden spoon 
Keep adding in soya milk, a little at a time until the dough starts to form.
Step 3- Flour your surface, and kneed the dough into a ball.
Continue to add dairy-free milk until dough comes together.
Step 4- With a rolling pin, roll out the dough until around 1cm thick, and cut out your desired shapes, i went for cute gingerbread men!
Step 5- Once you have all the cookies on the tray, lightly brush some dairy-free milk over each cookie then place into the middle of the oven.
 Bake for around 12-15 minutes.
We want a light brown colour, so watch them after 10 minutes so they don't burn

Step 6- After 12-15 minutes, carefully remove the tray from the oven and place your cookies onto a cooling rack.

While the cookies cool, make your icing.

Step 7- In a mixing bowl, combine the icing sugar, cinamon, soya milk and vanilla extract until thick.

Pipe your icing onto the cooled cookies and enjoy!

Store in a sealed container and eat within 3-4 days!
