Sun-dried tomato hummus

Vegan, wheat-free, gluten-free, low oilWith only a few ingredients, you can make the perfect, delicious hummus at home!
Hummus contains a good source of vitamins, macronutrients, minerals, protein and fibre!
Hummus is such a quick & easy side to make. It is the perfect snack, paired with chopped carrots, breadsticks, crackers, rice cakes...! 
I always keep a can of chickpeas on hand, just incase i am in need of a wholesome fresh batch of yummy hummus! 
Sun-dried tomato is such a delicious addition to hummus, due to its oil content. This recipe only uses the oil from the sun-dried tomatoes!

Prepration- 5 minutes
Serves- Approximatly 6-8 servings

-2 cans of chickpeas (washed & drained)
-1/2 cup of sun-dried tomatoes (drained) 
-1 teaspoon of oil from the sun-dried tomato jar ( or you can use olive oil)
-3 tablespoons of tahini paste
-3 garlic cloves
-1/2 of lemon (juice)
-Pinch of pepper
-1 tablespoon of water

Step 1- Place the chickpeas, sun-dried tomatoes, oil, tahini paste, garlic, lemon juice, pepper  and water into a blender or food processor and whizz up on high until smooth.
(Add a little extra water or lemon juice if the hummus is too thick)

That's it! 

Serve with breadsticks, warm bread, carrots, celery...what ever you fancy!
I served my hummus with some japanease Black sesame rice crackers from Clearspring! These are so crunchy and delicious, highly reccomend as a healthy snack!

Keep stored in a sealed container in the fridge and eat within 3 days!
