Raw Ferrero Rocher's (mini christmas puddings)

Vegan, RAW, Guilt-free, Natural sugar

Tis' the season for Ferrero Rocher's....raw style!
These hazelnut truffles are utterly divine with a secret whole hazelnut inside. What could be better than a healthy truffle??? 
They taste divine with a luxurious richness, look adorable and will impress your friends and family!
The truffles are vegan and contian a good level of protein.
Cacao is great for your health.

Preparation- 5 minutes
Makes- Around 12 truffles

Ingredients for the truffle
-150g of hazelnuts
-1 teaspoon of gluten-free oats
-1 teaspoon of vanilla extract
-5 teaspoons of maple syrup
-30g of cacao powder
-Homemade raw chocolate (Recipe here)
-Cocoa white chocolate (Recipe here )

Decoration (optional)
-Mint leaves (for decoration)
-Dried cranberries 

Step 1- Add the whole hazelnuts into a food processor/blender and whizz up until chopped.

Step 2- Add in the oats, vanilla extract, maple syrup, cacao powder and mix again until it combines.

Step 3- Roll the mixture between your hands to create round truffles.
Repeat for all of the mixture, then pop into the freezer for 5 minutes.

Step 4- Firmly press a whole hazelnut into each truffle, then return back into the freezer.

Step 5- Make your raw chocolate.

Step 6- Coat each truffle with chocolate then roll in chopped hazelnuts.

Step 7- Pour on the melted "white chocolate" to replicate frosting on a christmas pudding, and decorate with dried cranberries & mint leaves.
