Neapolitan yoghurt breakfast bites

Vegan, dairy-free, quick & easy

Who likes chocolate, strawberry and vanilla....aka Neapolitan?! ME!!!
I had an idea to make a breakfast option which not only tastes yummy, but looks amazing & instagrammable.

These Neapolitan bites are made with dairy-free yogurt, how amazing is that?!

The chocolate layer is made using cacao. Cacao has a whole range of health benefits.

The strawberry layer is yogurt with fresh, strawberries and the topping is coconut cream & vanilla.

These bites are a great, quick & easy breakfast option. You could even enjoy them as a creamy dessert or a flavourful snack.
I love how the three flavours mix together and create an almost ice-cream texture & flavour. It's honestly a dream to wake up too!

Preparation- Overnight
Makes- Approximately 16
Level- Easy

Ingredients for the chocolate layer
-200g dairy-free plain yoghurt
-1 teaspoon of dairy-free milk (i used unsweetened almond)
-2 tablespoons of cacao powder

Ingredients for the strawberry layer
-200g of dairy-free plain yoghurt
-1 cup of fresh strawberries
-1/2 lemon (juice)

Ingredients for the vanilla layer
-200g of coconut cream
-2 teaspoon of vanilla extract

Toppings (optional)
-Gluten-free oats
-Cacao nibs
-Cacao powder
-Fresh strawberries

Chocolate layer
Step 1- Line a cupcake tin with cases. 

Step 2- Place the plain yoghurt in a mixing bowl along with the cacao powder and mix together.

Step 3- Pour into your cake cases and pop into the freezer to set.

Strawberry layer
Step 1- Wash and chop the strawberries and place then into a small saucepan along with the lemon juice and heat on low.

Step 2- When the strawberries begin to soften, mash them with a potato masher.
Leave on a low heat and reduce down until the mixture is around 1/3 of the original. Keep stirring so the mixture doesn't stick to the pan.

Step 3- Place the strawberry mixture into a bowl, add in the yogurt and mix together.

Step 4- Pour onto the chocolate layer and pop back into the freezer.

Vanilla layer
Step 1- Open the can of coconut cream and drain out the liquid, you only want the cream.

Step 2- Place the coconut cream into a bowl and add in the vanilla. Mix well.

Step 3- Spread the cream onto the strawberry layer and even out.

Pop back into the freezer to set fully. 

This will take around 4-6 hours.

Keep stored in the freezer and defrost for 30 minutes before enjoying.
