Orange & pineapple 'mock'tail (ft Fentimans drinks)

How is everybody finding dry January?

What is dry January?
Dry January is a custom of abstaining from alcohol for the month of January to detox after Christmas & New Year celebrations.

I've created a delicious 'mock'tail based around the yummy Fentimans mandarin and seville jiggler

This fermented botanical orange drink with ginger and herbal extracts is not only refreshing but absolutely delicious. I love it!!!
I wanted to make an iced creamsicle, inspired by a pinacolada cocktail...but alcohol-free and vegan of course. I have made this drink super creamy and luxurious, because that is what comes to mind when i think of a tropical cocktail.

This is one recipe using one of Fentimans flavoursome drinks. There are a range of delicious flavours for you to experiment with and create some tasty mocktails. I can't wait to try out the Cherry cola in a 'mock'tail, i know it will be mouth-wateringly good, yum! 

Fentimans have a range of delicious drinks. I chose to use the orange & ginger as its ultra fresh and zingy. It tastes like fizzy orange juice with a kick (from the ginger), paired with pineapple, it is delightful. One for the grown ups :)
Whether you are wanting a divine tropical 'mock'tail or just a refreshing, fruity (and don't forget creamy) drink, you will love this! 

'Mock'tails are not only for dry January, but can be enjoyed all year round, especially in the summer months.

Makes- 3 drinks 
Level- Easy

-200g pineapple
-280ml of coconut milk
-275ml Fentimans Mandarin & Seville Orange Jigger (1 bottle)
-100g ice
-Pinch of ground cinnamon

-Dairy-free vanilla ice-crem (I used 'My Dairy-free Dream' in vanilla)

Step 1- Pop all of the ingredients into a blender/food processor and whizz up until smooth & creamy.
Step 2- Pour equal amounts of the 'mock'tail into each glass.

Step 3- Add a scoop of ice & vanilla ice-cream into each glass and garnish with fruit.
I added a slice of pineapple, orange and fresh ginger on a cocktail stick and added some gold leaf to the edge of each glass for a special touch & added luxury.
You can even serve then with a mini sparkler. This looks wonderful and is perfect for special events, occasions etc...
