Baked tortilla samosa recipe

Vegan, wheat-free, gluten-free, no-fry

What beats a spicy samosa?! Nothing!!!
I love the crispy coating with the spicy filling, but the downside about traditional samosas is that they are made with pastry and deep fried which isn't the best for you, even though they taste insane.
I wanted to make some healthier samosas, but keeping the same tasty textures and flavours!

I decided to make some baked tortilla samosas with a curried potato filling. 

My favourite spice/marinade is the Zim's Tribe. They are hands down the best ever marinade/sauce you will ever try! Perfectly spiced and extremely moorish.

The tortilla wraps crisp in the oven whilst the part cooked filling is just perfect. 
If you like indian flavours, you will love these!

Preparation- 10 minutes
Cooking time- 20-30 minutes
Makes- 10
Level- Medium

Ingredients for the filling
-2 large potatoes (chopped into small squares)
2 large carrots (chopped into small squares)
-1/2 white onion (finely chopped)
-30g of spinach (roughly chopped)
-Pinch of salt
-1 pack of tortilla wraps (you can use gluten/wheat-free)
-1 tablespoon of light olive oil

To make the flour paste
-2 tablespoons of flour
-6 tablespoons of water

Step 1- Preheat your oven to 160 degrees c, gas mark 4 and line a baking tray with greaseproof paper.

Step 2- Fill a pan with hot water and place in the potatoes.
Part cook the potatoes for around 5 minutes until they begin to soften.
Don't overcook them or they will turn to mush.
Carefully cut them into little cubes and set aside. 
Step 3- Steam the carrots for around 5 minutes then carefully chop them into little cubes and set aside.
Step 4- Heat the oil in a frying pan and add in the onion and fry until golden brown.
Step 5- Add in the part-cooked cubed potatoes, steamed cubed carrots, spinach, marinade and salt. 
Carefully mix and allow to cook for a few minutes then set aside.  
Step 6- In a small bowl, combine the flour and water to create a paste.

To make the samosa wraps
Step 7- Cut a large tortilla wrap down the centre. Fold one side over and add a little paste then fold the opposite side over on top of the paste. This acts as a glue.
Step 8- Fill the samosa and seal with more paste.
Place onto the baking tray.
Step 9- Brush oil over each samosa and pop into the oven to bake.
Bake for around 10 minutes or until golden in colour and crispy to touch.

Serve with fresh coriander, squeeze of lime, fresh dairy-free yoghurt etc.
