Healthy banoffee Nice Cream recipe

Vegan, gluten-free, wheat-free, natural sugar, Easy

If you're not familiar with using bananas to create 'nice' cream yet, you're in for a real treat!

Banana with toffee is one of the most delicious combinations ever. Banana splits spring to mind.
I had the idea to use banana nice-cream (a flavourful, healthy alternative) as the base, and then add some delicious 'healthy' toffee/caramel sauce to create banoffee. Add a drizzle of dark chocolate and this is a real indulgent and tasty treat.
Its all natural, and why not enjoy it for breakfast (maybe leave off the chocolate for this :P )
This recipe is 100% vegan, gluten-free, raw, natural sugar and easy.
Yummy :)

Preparation- 5 minutes
Freezing time- Overnight
Serves- 5
Level- Easy

Ingredients for the 'nice' cream
4 large bananas (frozen overnight)
-100ml of almond milk (I use unsweetened)

Ingredients for the 'toffee' sauce
-120g of pitted dates
-1/2 lemon (juice only)
-1 teaspoon of vanilla extract
-1 tablespoon of coconut oil
-100ml of almond milk

Toppings (optional)

-Toasted oats
-Coconut cream
-Dark chocolate
-Fresh chopped banana

Step 1-  Pit the dates and place them into a food processor along with the lemon juice, vanilla extract, coconut oil and almond milk

Whizz up until smooth.  This will take around 5-10 minutes on high. Depending on how you want the sauce, add more milk for a runnier consistency.
Set aside.
Step 2- In a food processor/blender, whizz up the frozen bananas until smooth.
Pop into a bowl.
Step 3- Drizzle over some of the homemade toffee sauce and finish with a drizzle of dark chocolate, walnuts, chopped banana and chocolate.

Even add a sprinkling of oats and coconut cream.

Best served fresh.
