No-bake vegan coconut 'bounty' truffles

Vegan, dairy-free, wheat-free, gluten-free

Delicious bite-sized coconutty truffles dunked in dairy-free chocolate and drizzled with even more yummy chocolate.
Who doesn't love a good'ol no bake recipe?! I do!!!
I wanted to make a little something for my mum for her birthday, along with an adorable cat cake I made for her! Check it out on my instagram here.

Coconut is one of her favourite flavours so it only seemed right to make her some bite-sized truffles which are homemade and vegan. PS...they taste so good, just like a bounty bar!
This recipe only requires 4 ingredients so a batch can be whipped up in minutes. Always good to hear :)

Preparation- 5 minutes
Freezing time- 10 minutes
Makes- 8-10 truffles
Level- Easy

-160g of unsweetened desiccated coconut 
-75g of coconut oil (melted)
-3 & 1/4 tablespoons of maple syrup
-100g of dairy-free chocolate (I used Moo Free baking drops)

Step 1- Line a tray with grease proof paper.

Step 2- Place the coconut, coconut oil and maple syrup into a food processor/blender.
Whizz up until combined.
Step 3- Form into balls and place onto the lined tray and pop into the freezer to firm up.

Step 4- In the mean time, melt the chocolate.

Step 5- Once the truffles are firm, dip the truffles into the chocolate and place back on to the lined tray and drizzle with the remaining chocolate.

Pop back into the freezer to set.
You can enjoy them straight from the freezer or you defrost them and enjoy later.
