Baked Oreo doughnut recipe

Vegan, baked

Say hello to the best vegan "oreo" doughnuts ever!
However you say doughnuts/donut.....this recipe will be a keeper!

Who wouldn't like doughnuts with crushed cookie & cream cookies, with a delicious vanilla cream cheese glaze, topped off with even more "oreo" cookies?! My hand is sky high!

These doughnuts are super easy to make and will be gone within minutes of serving, they're that good!

If you imagine a tasty "Oreo" cake, these are exactly what they taste like!
The glaze complements the doughnut like a dream and sets off the Oreo flavour even more!
This recipe is 100% vegan and absolutely moorish! 
They're soft, fluffy, light and flavourful.

Preparation- 5 minutes
Baking time- 10-12 minutes
Makes- Approximately 12 small/medium sized doughnuts
Level- Easy

-140g of self-raising flour (I use gluten-free)
-45g of cacao powder
-1/2 teaspoon of baking powder
-1/2 teaspoon of bicarbonate of soda
-50g of golden caster sugar
-Pinch of salt
-1 vegan egg (I use VeganEgg)
-100ml of almond milk
-65 ml of light olive oil
-1 & 1/2 teaspoons of vanilla extract
-2 teaspoons of apple cider vinegar
-1/2 pack of Cookie & cream cookies (crushed) I use LoveMoreFoods

Ingredients for the glaze
-60g of vegan cream cheese
-4 & 1/2 tablespoons of dairy-free milk (I use unsweetened almond)
-1 & 1/2 teaspoons of vanilla extract
-250g of icing sugar
-1/2 pack of cookie & cream cookies (crushed) I use LoveMoreFoods

 To make the doughnuts 

Step 1- Preheat the oven to 180 degrees c and grease a doughnut tin with oil or vegan butter.

Step 2- In a large mixing bowl, add in the flour, cacao powder, baking powder, bicarbonate of soda, sugar and salt.

Mix until combined.
Step 3- In a separate mixing bowl, combine the vegan egg substitute, dairy-free milk, oil, vanilla extract and vinegar.

Step 4- Add the wet ingredients to the dry and mix until combined.

Step 5- Fold in the crushed "oreo" cookies.

Step 6- Transfer the mixture into a piping bag and fill the greased doughnut tins around 3/4 full.

Step 7- Pop the doughnuts into the oven and bake for 10-12 minutes.
Make sure they don't burn on top.

You will know they are done when you put a knife or skewer in and it comes out clean.
Allow the doughnuts to cool fully before glazing.

To make the glaze
Step 1- In a food processor/blender or with a hand mixer, whisk together the cream cheese, dairy-free milk, vanilla extract and icing sugar until smooth & silky.
Step 2- Dip the doughnuts into the glaze and top off with a sprinkling of crushed oreo cookies.
Store these yummy doughnuts in a sealed container to keep fresh & delicious!
