Healthy vegan twix bar recipe

Say hello to the most delicious vegan ‘Twix’ bars!

Twix bars are a biscuit base with a caramel center topped off with chocolate. The original Twix bars aren’t vegan, so I wanted to make my own, but of course, make them vegan & gluten-free so everyone can enjoy them!

I’ve seen lots of recipes online using caster sugar & butter in these sort of recipe, but I wanted to make a more natural & healthier version.

I used coconut flour to create a deliciously baked base, along with homemade almond butter caramel which is dreamy, topped off with rich, dark chocolate -YUM!

The biscuit is soft and crumbly, along with a creamy caramel and dark chocolate.

They are simple and easy to make and taste divine!

They would be great for a party, special occasion or to gift to a chocolate lover!

Preparation- 5 minutes

Baking time- 10 minutes

Makes- Approxminlty 10 bars

Level- Easy

Ingredients for the base

-150g of coconut flour

-140g of coconut oil (Solid)

-4 tablespoons of maple syrup

-1/4 teaspoon of salt

Ingredients for the caramel

-120g of almond butter (Get my homemade recipe here)

-70g of coconut oil (Melted)

-85g of maple syrup

-1 & 1/2 teaspoons of vanilla extract/flavouring 

Ingredients for the chocolate

-150g of dairy-free dark chocolate

-2 tablespoons of coconut oil

To make the base

Step 1- Pre-heat your oven to 178 degrees c and line a square baking tin with grease proof paper.

Step 2- In a mixing bowl, combine the coconut flour, coconut oil, maple syrup, and salt.

Mix and bring together with your hands until a dough forms.

Step 3- Press the dough into the lined tin and pop into the oven to bake for 10 minutes, until golden in colour.

Allow to cool fully before topping.

To make the caramel

Step 1- In a mixing bowl, add in the almond butter, melted coconut oil, maple syrup and vanilla extract.

Mix until smooth.

Step 2- Pour over the base and pop into the fridge for an hour to set.

To make the chocolate

Step 1- Fill a small saucepan with hot water and place a heat-proof bowl on top.

Step 2- Add in the chocolate and coconut and melt until smooth.

Step 3- Smooth the chocolate over the caramel layer, even out with a spatula or spoon and pop back into the fridge until the chocolate sets.

This will take around 30 minutes.

Step 4- Once solid, heat a knife and cut into ‘Twix’ bars.

Serve cold, as they will soften if left at room temperature for too long.

Store in a sealed container in the fridge, best eaten within a few days.

    Hmmm must try with sunflower butter (allergic to almond)…
