Strawberry oat breakfast bar recipe

Vegan, gluten-free, wheat-free, natural sugar

You can't beat a homemade breakfast. If I know there is a yummy breakfast treat in the kitchen, i'm out of bed in a flash!

These tasty little bars are made from oats which are great in protein (and taste delicious) along with homemade almond butter, almond extract, and fresh strawberries. 
This recipe is vegan + gluten-free and low in natural sugars which is always great for a morning breakfast. 
They would even be amazing crumbled over dairy-free yogurt or milk....yum!

Preparation- 5 minutes
Baking time- Approximately 10 minutes
Serves- 9-10
Level- Easy

-200g of whole rolled oats (I use gluten-free)
-2 & 1/2 tablespoons of coconut oil (melted)
-2 tablespoons of maple syrup
-1 teaspoon of almond extract
-2 tablespoons of almond butter (Get my recipe here)
-100g of fresh strawberries (Chopped)

Step 1- Pre-heat your oven to 180 degrees c and line a square tin with grease proof paper.

Step 2- Place the oats into a large mixing bowl.

Step 3- Place the coconut oil, maple syrup, almond extract and almond butter into a small saucepan and heat until melted.
Step 4- Carefully pour the liquid into the oats and combine together.

Step 5- Fold in the strawberries.

Step 6- Press into the lined tin, making sure to get into the corners.
I use a metal spoon as it prevents sticking.

Step 7- Pop into the oven and bake for around 10 minutes until golden in colour.

Step 8- Carefully remove from the oven and place onto a baking rack to cool.

Once cool, cut and serve.

Store in a sealed container, eat within a few days.
