Healthy snickers bars recipe

Vegan, gluten-free, wheat-free, natural sugar, no-bake, RAW

Chocolate bars/candy bars don't have to be packed with unnatural sugars to be as tasty and delicious. I've created these tasty vegan "Snickers" bars, with a raw 'nougat' base, a scrumptious date caramel filling, a chocolate coating and it wouldn't be a Snickers without tons of peanuts!

They are packed full of natural ingredients and protein. 
The real star of this bar is the date caramel, it's silky smooth and moorish! It's not too sweet, but gives a delicious flavour to this bar! 
These bars are pretty darn close to the authentic 'Snickers' bar, the only difference...they are soooo much healthier for you and guilt-free...yay!!!!

Preparation- 1 hour
Freezing time- 1 hour
Makes- Around 10 bars
Level- Easy

Ingredients for the nougat base
-135g of brazil nuts (soaked for 1 hour, then drained)
-10g of unsalted peanuts
-1 can of coconut cream (cream only)
-65ml of coconut oil (melted)
-2 tablespoons of maple syrup
-1/4 teaspoon of vanilla extract
-85g of ground almonds

Ingredients for the caramel layer
-210g of medjool dates (soaked for 1 hour)
-210ml of water
-1 teaspoon of vanilla extract

Ingredients for the chocolate topping
-Dairy-free dark chocolate
-1 tablespoon of coconut oil

To make the base
Step 1- Line a square baking tin with greaseproof paper.

Step 2- Add all of the nougat ingredients into a food processor/blender and whizz up until smooth.
Step 3- Press the mixture into the lined tin and pop into the freezer for around 1-2 hours.

To make the caramel
Step 1- Place the soaked dates into a food processor/blender and whizz up until smooth, adding in the water and vanilla a little at a time.

Step 2- Smooth over the nougat, sprinkle over some peanuts then pop back into the freezer whilst you make the chocolate.

To make the chocolate
Step 1- Fill a small saucepan with hot water and place a heat-proof bowl on top, creating a bain-marie.

Step 2- Add in the chocolate and coconut oil and melt until smooth.
Step 3- Dunk the bars into the chocolate, even out with a spatula or spoon and pop back into the freezer until the chocolate sets.
This will take around 30 minutes.

Serve cold, as they will soften if left at room temperature for too long.
Store in a sealed container in the fridge, best eaten within a few days.
