Easy brownie cookie recipe

Vegan,  gluten-free, wheat-free, quick & easy

A fantastic chocolate cookie recipe which is quick, easy and absolutely delicious!
I combined a cookie & brownie to create a deliciously thick, soft, chewy and perfectly sweet 'brookie'!
These are definitely one of the best cookies I have tried.

The cookies take minutes to make and can be enjoyed straight from the oven. They've gone down a storm with my family & friends, and am sure you are going to love them too!!! 
Preparation- 5 minutes
Baking time- 10-12 minutes
Makes- 8-10
Level- Easy

-85g of vegan butter/margarine (I use Tomor)
-100g of golden caster sugar
-4 tablespoons of dairy-free milk (I use unsweetened almond)
-1 teaspoon of vanilla extract
-250g of self-raising flour (You can use gluten-free)
-4 teaspoons of cacao powder
-1 teaspoon of bicarbonate of soda
-1 teaspoon of baking powder
-35g of dairy-free chocolate (I use Cocoa Libre honeycomb chunks)

Step 1- Preheat your oven to 175 degrees c and line a baking tray with greaseproof paper.

Step 2- In a mixing bowl or stand mixer, whisk the butter and sugar together until smooth.
Step 3- Add in the dairy-free milk and vanilla and combine.

Step 4- Add in the flour, cacao powder, bicarbonate of soda and baking powder and mix until a dough forms.
Step 5- Fold in the chocolate chips/chunks until well distributed.
Step 6- Roll about 2 tablespoons of dough into balls, place onto the lined tray and press down with the palm of your hand to flatten slightly.
Repeat for all of the cookies.
Pop the cookies into the oven and bake for 10-12 minutes.

Step 7- Once baked, remove them from the oven and allow them to cool. As they cool, they will crisp off.
I served my cookies with a drizzle of leftover chocolate, but you can serve them as they are or even add a dust of icing sugar.

Store in a sealed container and enjoy within a few days.

  2. I made these, today and OMG! Not only are they sooo easy and quick but also the most delicious chocolate cookies I ever made! I added some white chocolate too along with the regular one & I'm totally in love ♥

  3. I tested the recipe today and looooved it, one of the best cookies I have made.
    However, the proportions were a bit off for me. I had to add more margarine and milk and the cookie did not come out as dark as in the pictures. I thought that 250g was maybe too much flour. But it still came out absolutely delicious. Thanks a lot for this amazing yet super simple recipe.
