Healthy raspberry oat squares recipe

Vegan, gluten-free, wheat-free, low in natural sugar

Who fancies a healthy raspberry oat square!? You can even enjoy them for breakfast too!
These bars are a crumby oat base with a delicious homemade raspberry jam, which is protein packed, full of chia seeds.

These may just be the best oat based bars I've ever had! And the secret ingredient... bananas!
To make these bars healthy, I used bananas as the main ingredient along with oats which gives a scrumptious, chewy texture which is perfectly sweet.

Preparation- 10 minutes
Baking- 25-30 minutes
Makes- 9-10
Level- Easy

Ingredients for the raspberry jam
-300g of frozen raspberries
-5 teaspoons of chia seeds

Ingredients for the oat squares
-110g of gluten-free oats
-80g finely ground oats
-1 teaspoon of baking powder
-2 medium bananas (mashed)
-40ml of maple syrup
-1 teaspoon of vanilla extract

To make the jam
Step 1- Add the berries into a small saucepan of the hob over a medium heat.

Step 2- Bring to a boil until the berries reduce down and begin the thicken.
Step 3- Stir in the chia seeds and set aside.

To make the oat squares

Step 1- Preheat the oven to 185 degrees c and line a square baking tin with greaseproof paper.

Step 2- In a bowl, add in the oats, oat flour, baking powder and mix.

Step 3- Add in the bananas, maple syrup and vanilla extract and mash until smooth.

Step 4- Transfer the mixture into the lined tin and press down using a spoon until level.

Step 5- Spead the jam over the top and finish with a sprinkling of whole oats (press them down a little so they stick to the jam).
Step 6- Pop into the oven and bake for 25-30 minutes, until golden in colour.

Step 7- Once baked, allow to cool and slice into squares.

Store in a sealed container and enjoy within a few days.
