Strawberries & cream mermaid pancakes

Vegan, gluten-free, wheat-free, quick & easy.

Imagine waking up for breakfast and finding this mer-mazing mermaid inspired pancake stack waiting for you!?
These pancakes are strawberries and cream flavour, naturally flavoured and coloured with strawberry powder. I use a strawberry superfood powder from Natures Restore!

To celebrate this beautiful weather and to go along with the mer-mazing theme, I’ve been using my new Umberto Giannini ‘Boho beach’ products! I AM IN LOVE! Did you know Umberto Giannini are actually 100% VEGAN + CRUELTY-FREE? Well... you do now! They have products like scrunching jelly, shampoo & conditioner etc! Make sure to check them out! They smell beautiful & make your hair silky soft.
These pancakes are quick & easy to make, perfect for a dessert or for a special breakfast! 

Preparation- 5 minutes
Cooking time- 3-5 minutes  
Makes- Around 8-10 pancakes
Level- Easy

-250g of plain flour (I use gluten-free)
-1 & 1/2 tablespoons of baking powder
-2 tablespoons of golden caster sugar 
-1/4 teaspoon of salt
-2 teaspoons of strawberry powder
-300ml almond milk (I use unsweetened)
-3 tablespoons of oil (I use light olive oil)

To serve
-Coconut whip (Get my recipe here)

Step 1- Add the flour, baking powder, sugar, salt and strawberry powder into a bowl and mix.

Step 2- Pour in the dairy-free milk and oil and combine until smooth.
Set aside for 5 minutes.
Step 3- Heat a tablespoon of oil in a frying pan.

Step 4- Spoon the batter into the pan, about 2 tablespoons at a time.
Allow the edges of the pancake to turn golden then flip.

Step 5- Once both sides are golden in colour, serve.

I served my pancakes stacked, with coconut cream whip and homemade fondant shells.
Flowers for decoration only!
