Apple rose pastries recipe

Vegan, gluten-free, wheat-free, quick & easy.

Autumn calls for all things apple and spice, right?

These are my little puff pastry apple bites, with a cinnamon sugar filling, apple slices, wrapped in gluten-free puff pastry, finished with a dusting of icing sugar, served with a drizzle of caramel sauce and dairy-free cream.

How dreamy do they sound….and look? YUM!

These rose shaped desserts would be perfect to serve at a birthday, special occasion or to impress your loved ones!

Everyone will be super impressed with these pastries and they taste like they’re straight from a patisserie!

They’re light, perfectly sweet, flakey and full of delicious flavour!

You don’t have to be a master baker to make these, everyone & anyone can make them!!!

Preparation- 15 minutes

Baking time- 15-20 minutes

Makes- 6

Level- Easy

– 1 Puff Pastry sheet (I use Jus-Roll GF puff pastry)

-2 apples (finely sliced)

-200ml of boiling water

– 1/2 lemon (juice only)

– 50g of golden caster sugar

-1 teaspoon of ground cinnamon

-1 tablespoon of dairy-margarine/butter (egg wash replacement)

Step 1- Preheat your oven to 180 degrees c and grease a cupcake tin with oil.

Step 2- Pour the boiling water into a bowl and squeeze in the juice of half a lemon.

Step 3- Finely slice the apples (wafer thin) and place in the hot lemon water.

Allow the apples to soften in the water.

This will take around 5 minutes, then drain.

Step 4- Roll out the puff pastry and slice into 6, two-inch strips.

Step 5- In a bowl, combine the sugar and ground cinnamon.

Step 6- Spread vegan butter/margarine over the strips of pastry and sprinkle over the cinnamon sugar.

Step 7- Place the apple slices along one long edge of pastry, about 5mm beyond the edge of the pastry, overlapping the slices slightly.

Watch this video on how to roll up these rose pastries.

Step 8- Fold up the bottom part of the pastry, leaving the rounds of the apples exposed.

Step 9- Starting from the long end, carefully roll the dough, keeping the apple slices in place. Seal the edge with a little bit of butter/margarine and place into the greased cupcake tin.

Repeat for all 6 rose pastries.

Step 10- Place the pastries into the middle of the pre-heated oven.

Bake for 15-20 minutes, or until lightly golden in colour.

If the apple slices begin to burn, cover them with foil and return into the oven for the pastry to cook.

You want the pastry to be cooked throughout.

Serve with caramel sauce, dairy-free ice cream/cream or a dusting of icing sugar.

You could even serve them with custard or a fudge sauce (optional).

These pastries are best enjoyed warm, still crisp and the apples soft.

You can store them in a sealed container for up to 2 days in the fridge.
