Vegan eggnog recipe (Starbucks copy cat)

Vegan, dairy-free, wheat-free, gluten-free.

This eggnog recipe is pretty special.

Warm, cosy, creamy, rich… are all of the things I think of when it comes to a festive drink.

Eggnog is a rich, chilled, (usually) dairy-based drink, consisting of whipped egg whites and egg yolk.

It used to be my absolute favourite around this time of year, but since turning vegan, I haven’t been able to enjoy one….until now!

This eggnog is not only visually gorgeous but tastes divine. 

It’s perfectly sweet, spicy and ultra smooth. The festive holiday isn’t complete without it!

Grab a blanket, pop on a festive film and enjoy one of these delightful drinks!

They’d be great to serve at Christmas parties/events too!

Preparation- 2 hours

Serves- 4

Level- Easy

Ingredients

-50g of cashew nuts (Soaked in hot water for 2 hours)

-1 can of coconut milk (Cream only)

-200ml of dairy-free milk (I use unsweetened almond milk)

-1 teaspoon of vanilla extract

-2 & 1/2 tablespoons of coconut sugar

-1/4 teaspoon of ground cinnamon

-1/2 teaspoon of ground nutmeg

-Pinch of salt

+

-Vegan cream (Schlagfix Schlagcreme Vegan Squirty Cream)

Step 1- Drain the cashew nuts.

Step 2- Place all of the ingredients into a high-speed blender and whizz up until silky smooth.

This will take a few minutes.

Step 3- Dip the rim of your serving glasses in maple syrup and coat in sugar (optional)

Serve with a swirl of vegan cream and a dash of ground nutmeg.

I also served with some of my 3 ingredient cookies!

Best enjoyed fresh, day of making.
