Description

Learn how to make the best, light and fluffy Vegan Chocolate Chip Pancakes! 


Ingredients

Units Scale
  • 250g of plain flour (you can use gluten-free)
  • 1 & 1/2 tablespoons of baking powder
  • 1/4 teaspoon of salt
  • 3 tablespoons of caster sugar
  • 3 tablepsoons of sunflower oil
  • 300ml dairy-free milk
  • 1 teaspoon of vanilla extract (you can use orange for chocolate orange pancakes)
  • 30g of dairy-free chocolate chips

  • Drizzle of maple syrup
  • Dairy-free ice-cream
  • Dairy-free chocolate chips

Instructions

Method (pancakes)

  1. Add the flour, baking powder, salt and sugar into a medium sized mixing bowl and mix to combine.
  2. Pour in the oil, dairy-free milk and vanilla / orange extract. Mix and combine until smooth.
  3. Fold in the chocolate chips. Set the batter aside for 5 minutes.
  4. Heat a tablespoon of sunflower oil in a frying pan.
  5. Spoon the batter into the pan, about 2 tablespoons at a time. Allow the edges of the pancake to turn golden then flip. Watch me make these pancakes here.
  6. Once both sides of the pancake are golden in colour, remove from the pan and plate up!
  7. I served my pancakes with a square of dairy-free block butter ( I use Naturli), a drizzle of maple syrup and sprinkled over more chocolate chips. Oh, and can’t forget the swirl of dairy-free cream on the side- yum!

Notes

Store: These pancakes are best enjoyed day of making. If you leave them out, they will turn soft, so they’re best enjoyed within an hour of making them.
