Ever wanted to satisfy your sweet tooth fast? I have you covered with these quick & easy mini apple pies!
Why not get creative and roll up some leftover puff pastry into roses? They look very effective whilst tasting delicious! I’m sure everyone will be super impressed!
To make these apple pies quick & easy, I used the Jus-Rol gluten-free puff pastry which is 100% vegan!
It’s so easy to use, just unroll it and add it to your pie tin’s with no preparation needed!
I made my own homemade apple filling which is scrumptious, it’ll become your go-to apple pie filling I’m sure!!!
Preparation- Approximately 20 minutes
Cooking time- 10-15 minutes
Makes- 3 medium sized pies
Ingredients for the filling
-2 tablespoons of dairy-free butter
-1 teaspoon of ground cinnamon
-4 medium-sized apples
-80g of golden caster sugar
-1 tablespoon of cornstarch
-4 tablespoons of water
-Jus Rol gluten-free puff pastry (You can use homemade)
-Dairy-free butter (melted)
Step 1- Core and chop the apples into squares.
Step 3- Add in the chopped apples, sugar and cook until the apples soften.
Step 4- Add in a dash of cornstarch and the water.
Allow the apples to cook for a few minutes until the sauce has thickened and the apples have softened, but not mushy.
Set the filling aside to cool.
Step 6- Brush over some melted butter and pop into the oven and bake until the pastry is golden brown.
This will take approximately 10-15 minutes.
Serve warm with ice cream, custard etc or cold!
Best enjoyed day of making or store in the fridge.
