Lemon & Strawberry Jam Cake

Vegan, Dairy-free, Wheat-free, Yeast-free
Who doesn't like cake?!
I wanted to create a cake for my mum's birthday!
As she loves Lemon & Strawberry, i went ahead & created a zingy Lemon cake filled with Strawberry Jam with a delicious homemade Strawberry Icing. 
Decorated with fresh fruit, drips of Dairy-free White Chocolate & edible gold, it made the perfect special birthday treat...which also looks beautiful!

I made the icing following my simple 3 Ingredient Buttercream frosting, adding in some extra Strawberry flavours!

This recipe is easy, simple & quick to make and full of delicious flavour and is 100% Vegan, aswell as being Wheat,Gluten and Egg-free!

Lemon & Strawberry are a divine pairing, which are sure to satisfy a sweet tooth!
This Cake is a wonderful dessert and can be paired with a scoop of Dairy-free ice-cream/Dairy-free Custard! Yum!!!

Ingredients for the Lemon Cake (double ingredients for 2-teir cake)
-1 cup of Lemon Juice
-1 Lemon (unwaxed Zest)
-1/4 cup + 3 Tablespoons of Plain dairy-free Yogurt (I used Alpro)
-1 Teaspoon of Vanilla Extract
-1/2 Teaspoon of Baking Soda
-1 cup of Gluten-free Self raising flour
-Pinch of Salt
-100g of Caster Sugar (or sugar of your choice)

Ingredients for the Strawberry Jam frosting
-380g of Icing Sugar
-330g of Dairy-free butter (I used Tomor)
-1/2 Teaspoon of Strawberry Flavouring (optional)
-1 cup of Strawberries
-Squeeze of Lemon juice
-1/2 cup of Low Sugar Strawberry Jam

To make the Lemon Cake

Step 1- Pre-heat the oven to 180 degrees.

Step 2- In a large mixing bowl, combine the Yogurt, Vanilla Extract, Lemon Juice & Zest.

Step 3- In a separate mixing bowl, combine the Flour, Salt, Baking Soda and Sugar.
Pour the dry ingredients into the wet mixture and mix until smooth.
Step 4- Line a cake tin with grease proof paper, then pour the cake batter into the tin. Make sure to tap the tin on the worktop to remove any air-bubbles.
Step 5- Place in the oven and bake for 25-30 minutes.
You can tell if the cake is cooked, by sticking in a skewer or cocktail stick & it comes out clean.
If it comes out with some mixture, it needs a little more time.

Step 6- Remove the cake from the oven and place onto a cooling rack.
Let the cake fully cool before filling & icing!

To make the Strawberry Frosting

Step 1- Wash and chop up the fresh Strawberries and place into a small, non-stick saucepan on low heat along with a squeeze of Lemon Juice.
Cook until mixture reduces to around a 1/4 of its original amount. 
Keep stirring with a wooden spoon to prevent the mixture sticking to the pan! 

Step 2- Using a hand mixer, whizz up the batter until smooth, slowly add in the icing sugar.

Step 3- Once fluffy, add in the Strawberry compote, Strawberry Jam and Strawberry flavouring.

Whizz up until fluffy and creamy.
Pop into the freezer for 10 minutes to stiffen. This makes the frosting easier to work with & pipe.

Spread an even layer of Strawberry jam between the cakes. 
Using a spatula, spread the frosting all over the cake!
Decorate with fresh Fruit/freeze dried Strawberries and a squeeze of Lemon, cut & serve!
Keep in the fridge. Before serving, leave the cake at room temperature for 10-15 minutes.

  1. lemon & strawberry jam cake...fantastic recipe. i want to try this can find this EasyWayFinder which get you more location of cake's shop.

  2. Is this the temperature for an electric oven? The battery seems quite white after 25 minutes in the oven.
    And do we have to double the battery, or did you mean that you already doubled them in your list?
    Looks great, so wish us luck!
