RAW chocolate, fruit & nut squares

Vegan, dairy-free, wheat-free, gluten-free, low sugar
As cranberries are now in season, i decided to incorporate these delicious little fruits into a RAW version of the Cadbury fruit & nut bar, but make it vegan of course!
Nuts and fruit go together like a dream. 
The base is made with ground nuts & nut butter which is very moorish, paired with a fruity chocolate topping, they are truly delicious and contain only natural sugars!

I added in some Moo free chocolate drops for an extra treat (this is optional)
Moo free have created baking drops which taste just like their orignial Moo free bars...honestly delicious!

These little bars are packed full of protein and flavour, they are perfect to take on days out, enjoy as a guilt-free dessert/snack...

Ingredients
-50g of ground hazelnuts
-50g of ground almonds
-100g of unsweetened desiccated coconut
-3 tablespoons of almond butter
-1 tablespoon of maple syrup
-Pinch of salt
-50g of dried cranberries
-20g of flaked almonds
-200g of dark chocolate
-30g of Moo free chocolate drops

Decoration
-Handful of flaked almonds
-Fresh cranberries

Step 1- Line a square baking tin with grease proof paper.


Step 2- In a food processor/blender, add in the ground almonds, ground hazelnuts, desiccated coconut, almond butter, chocolate drops, maple syrup and salt.

Blend until combined.
Step 3- Firmly press the mixture into the lined tray and sprinkle on-top the flaked almonds and dried berries.
Pop into the freezer.
In the mean time, melt the chocolate
At this stage you can make you own dark chocolate.
Get my recipe here , or you can use a dark chocolate bar, the choice is yours.

I used 99% vivani chocolate.

Step 4- Create a ban marie, and allow the chocolate to melt until smooth.


Step 5- Pour the melted chocolate over the base and tap on the worktop to remove any air bubbles.

Top with fresh cranberries & flaked almonds and place the tray into the freezer and allow to set.
 This will take around an hour!
Once set, slice into squares and serve.
Keep refridgrated.
